Roasted Herbed Potatoes




















  • 1 - 2 yams, peeled and cubed
  • 8 medium to large potatoes, cubed (unpeeled, washed well)
  • 1/4 cup olive oil (works with a little less too)
  • 1 1/2 teaspoons basil
  • 1 1/2 teaspoons oregano
  • 1/2 teaspoon thyme
  • (optional is garlic powder or salt to taste)
  • freshly grated black pepper and sea salt to taste
  1. Combine potatoes and yams.
  2. Drizzle with olive oil.
  3. Sprinkle with seasonings. 
  4. Bake at 425 degrees F for 40-45 minutes or until browned and the potatoes are tender.  (every oven temperature differs so watch for browning closely).

  3. true anneliese, we do more than one and the yams are picked out before the potatoes.......i am crazy for yams...and they are super good for you too!
