Barbequed Salmon with Sundried Tomatoes

I would guess that I’m not the only one, who would say that most of my favorite recipes are those that we’ve enjoyed in someone’s home. Our good friends, Harv and Bonnie love to cook together and we have been the lucky recipients of their hospitality over many years now. This is just one of the great recipes that they have shared with us. I've added the basil, so it's optional.

Ingredients:
  • 4 - 5 garlic cloves, chopped fine
  • 4 tablespoons fresh parsley, chopped fine 
  • 2 tablespoons fresh basil, chopped fine
  • 3 sundried tomatoes (packed in oil) drained and chopped (about 1/4 - 1/3 cup, chopped)
  • 3/4 teaspoon salt
  • 1/4 cup olive oil
  • 1 (2-3 pound) salmon fillet (with or without) skin on under side
Method:
  1. Combine garlic, parsley, basil, salt, tomatoes and oil in jar.
  2. Let stand overnight in refrigerator. (Overnight is best, but if you only have a few hours, that’s okay too)
  3. Spread a thin layer of mayonaise all over the salmon.
  4. Place on greased (doubled up) foil, (or on foil topped with parchment paper) on low heat on BBQ. Close lid and cook 10 min. 
  5. Spread garlic mixture over fillet. Close top and raise temperature to medium. 
  6. Cook an additional 15 - 20 min, until fish flakes easily when tested with fork.

  1. oh anneliese, i just bought a salmon this morning to make for my dh and i since our kids are all gone. this will make a real special dinner even more delish. shucks now i have to go back to the store for sundried tomatoes....i was even looking at them this morning wondering if i should get a jar.....dah, i shoulda.

  5. my stomach just growled reading the recipe. It looks wonderful and I'll bet it is delicious. We have salmon fairly often. We bought some at Wal-Mart just the other day. I'm seeing it in our future. It is just the two of us so it fits in our budget and I'd love to find it two for one.

  6. Funny you put this recipe up! I just bought a HUGE jar of sun-dried tomatoes at Costco (Shaun LOVES them) and then I just bought salmon at the grocery store yesterday, hoping to make this recipe this week. Now I don't have to look through my recipe books to find them...thanks. =)

  11. Just made your fish recipe in the oven rather than the BBQ. Turned out spectacular! Thanks for sharing the recipe. We're dipping fresh bread in the sun-dried tomato sauce... I think that sauce would be good on pasta.. or on bread as an appetizer... fabulous!

  12. I purchased sundried tomatoes in a jar from costco but I'm not sure how much to use. tsp. or tbsp. The amount is not listed. please list as I have lots of salmon to use up from this years BC. fishing trip. Saskatchewan girl

  13. Saskatchewan Girl... it amounts to about 1/3 cup sundried tomatoes, choppen finely and packed.
    I purchase the Cosco jar as well and found the oil in it hardened once I opened it and refrigerated it. I know it did not go bad, but it was kind of an extra step to liquify and drain the oil.

  14. I tried the salmon dish with sun-dried tomatoes 1/3 cup chopped, I didn't think ahead to marinate the spices so I just let it sit 1/2 an hr. This fish was excellent!! my husband and I really enjoyed it. This is a keeper recipe
