Blueberry Pineapple Cobbler

It's blueberry season and one of my favourite desserts using these sweet little berries in cobbler. I've added fresh pineapple to this recipe and I think it brings this simple dessert up a notch.

  • 4 cups fresh or frozen blueberries
  • 1 1/2 cup fresh pineapple chunks
  • 2/3 cup sugar
  • 3 tbsp corn starch
  1. Stir above ingredients together in a 9" square pan or pie plate. 
  2. Microwave for 3-4 minutes to just begin to warm.
Topping:
  • 1 cup flour
  • 1/3 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 tbsp cold butter
  • 1/2 cup buttermilk
  1. Stir together dry ingredients.
  2. Cut in butter until small pea size pieces.
  3. Stir in buttermilk.
  4. Top fruit mixture with topping. 
  5. Bake in 425ยบ oven for 20-25 minutes. Poke topping with a tooth pick to make sure cobbler topping baked through.
