Raisin Bran Muffin Tops


What part of a muffin do you like best? I love the tops best so when I came across this pan I just had to have it. At our house these muffins are called Myrna's Muffins, I have adapted them slightly from the original recipe. Thank you Myrna for sharing this recipe with me many years ago, I remember you baking the best muffins. Sometimes I add blueberries instead of raisins. I also have added cinnamon instead of vanilla. Either way these muffins are delicious.
  • 1/4 cup butter, softened
  • 1/2 cup sugar
  • 1 tablespoon molasses
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 1/2 cup bran
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1/2 cup raisins
  1. In a medium sized bowl stir together butter, sugar, and molasses until well blended. 
  2. Whisk in egg and vanilla.
  3. Mix dry ingredients, add to creamed mixture alternately with buttermilk just until blended. Don't over mix.
  4. Fold in raisins.
  5. Spoon mixture into muffin top tin.
  6. Bake in a 350º oven for 20 minutes.
  7. Yield: 12 muffin tops.

  3. Muffin tops would be good for a luncheon when you want a "little something" to nibble on, but not a whole muffin or roll.

  4. What a serendipitous posting!! I just bought several of these muffin top pans through amazon.com to distribute to my daughter-in-laws who wanted them to bake eggs for breakfast sandwiches (you spray the pan, put in the egg and break the yolk). I kept two pans myself. So since my husband loves bran muffins I am whipping up a batch immediately. Thank you.

    1. You can omit the molasses, you don't need to substitute anything. I have made them without molasses and they are good that way too. It just so happens that I love the slight molasses taste in these muffins:)
