Spicy Corn Dip


A delicious spicy corn dip to enjoy with tortilla chips. We also liked it as a side on the menu.
  • 1 tablespoon butter
  • 1/2 cup sweet peppers chopped, I used green and red
  • 2 cups corn, cooked
  • 1/2 cup mayonnaise
  • 1/2 cup cheese, shredded, I used cheddar and mozzarella
  • Salt and pepper to taste
  • 1/4 teaspoon cayenne pepper
  • Extra shredded cheese for sprinkling on top
  1. Melt butter in a skillet and saute chopped peppers over medium heat just until they start to soften for 2 to 3 minutes. Remove from heat.
  2. Stir in corn, mayonnaise, cheese, salt, pepper, and cayenne.
  3. Pour mixture into greased loaf pan.
  4. Sprinkle with extra cheese.
  5. Bake in a 350ยบ oven for 20 to 25 minutes, it needs to be hot and bubbly. 
  6. Serve with tortilla chips.
*Omit cayenne pepper if you don't like it spicy.

  2. OH MY...this looks so yummy! Thank you for posting this recipe! With pot lucks at church and picnics and BBQ's, this is definitely a keeper!
