Whether you are wrapping it up to go or sitting down at the table to eat, a breakfast wrap can be a healthy choice to start your day. 

Ingredients: (for 2 wraps)
  • 2 wraps, choose from whole wheat, white, pesto or sun dried tomato
  • 3 eggs
  • 1 1/2 tbsp milk
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1 tsp butter
  • handful of fresh spinach, optional
  • 1/3 cup fresh peppers, diced
  • 1/3 cup diced cooked ham (I like to keep some deli ham in the freezer for recipes like this)
  • 2 tbsp feta cheese (or use your favourite cheese)
Method:
  1. Heat wraps as directed on package.
  2. Whisk together eggs, milk, salt and pepper.
  3. In a non stick skillet melt butter and saute peppers for several minutes.
  4. Add diced ham and just heat through for another minute.
  5. Pour egg mixture over peppers and ham in skillet. Cook, scrambling eggs until cooked to your liking. This only takes a few minutes for the eggs to cook.
  6. Place warmed wraps onto plates. Top with fresh spinach. Divide scrambled egg mixture over spinach and top with cheese. 
  7. Roll to wrap and serve immediately.
Options:  Try adding fresh tomatoes or a spoon full of salsa. Jalapeno peppers or green onions will add  nice flavour as well. Cooked and crumbled bacon or breakfast sausage are a good choice too.
