This is the chocolate variation of my Final Oatmeal Cookies ... In the photo they are being sampled by my two granddaughters, and their Korean home-stay student. The verdict ? Mmmmmm.... can't eat just one!
- 1/2 cup butter
- 1/2 cup shortening
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 tsp vanilla
- 2 tbsp cocoa powder
- 1 (4 oz) pkg of instant chocolate pudding
- 1/4 cup white bean flour or chick pea flour
- 1/2 cup millet flour
- 1/4 cup potato starch
- 1/2 tsp xanthan gum
- 1/2 tsp soda
- 1 tsp baking powder
- 3 1/2 cups gf oat flakes
- 2 cups chocolate chips
- 1 cup chopped nuts (optional)
- Cream together butter, shortening and sugars
- Add eggs and vanilla and beat well.
- Add mixed together dry ingredients , stirring well
- Stir in chocolate chips and nuts.
- Drop by teaspoons onto greased cookie sheet.
- Bake in 350 degree oven for 10 to 12 minutes or until done. (Less time in oven leaves cookies softer, baking longer makes them crispier) . Let cool slightly before removing from pan.
Can you make these with ordianry white flour too?

I'm sure you could. Leave out the xanthan gum and use a little more reg. flour than the 1 cup gf called for.
