We have a new favorite vegetable side dish over here...cheesy cauliflower cakes. They are delicious, nutritious and come with a bit of heat. Try them. I think you'll like them!
- 1 medium-sized head cauliflower
- 1/2 cup shredded cheddar cheese
- 2 eggs, beaten
- 1/2 cup Panko bread crumbs
- 1/2 teaspoon cayenne pepper (or to taste)
- 1/4 teaspoon salt
- 1 tablespoon olive oil
- Cut cauliflower into florets and cook until tender (8-10 minutes).
- Drain. Mash cauliflower while warm.
- Cool slightly; then stir in cheese, eggs, bread crumbs and seasonings.
- Heat olive oil in non-stick skillet over medium heat.
- Form the cauliflower mixture into patties (about 3 inches in diameter).
- Cook until set and golden in colour...about 2 minutes per side.

I LOVE these! I made them last fall and ate them right out of the pan!

ReplyDeleteWhat size cauliflower did you use? Or approximately how many cups of raw cauliflower? These look delicious!
ReplyDeleteGood question. I use medium-sized head of cauliflower. They always seem to turn out just fine...whether the head is a little bigger or smaller.
DeleteAmazing. I can't wait to try this next week when I go back to the store to grab some veggies! This is so something my husband would eat - and it's hard to find him foods... he's so picky. I think this will do the trick!

ReplyDeleteI didn't have the Panko breadcrumbs so I used Italian Bread Crumbs instead since that's a staple in my household. My family loved this dish and I will make it again next week for a Bible Study social. So simple and delicious.....
