Mennonite Girls Can Cook is a collection of recipes which were posted daily for a period of ten years from 2008 to 2018. We have over 3,000 delicious recipes that we invite you to try. The recipes can be accessed in our recipe file by category or you can use the search engine.

Ham and Spaghetti Casserole and Book Giveaway


Our favorite recipe to use up the leftover ham from Easter dinner is this really easy and family friendly dish.  I've been making this most of my married life and even now with our kids grown and away from home the two of us still enjoy this comforting casserole.
Add a crisp green salad  and enjoy!

  • 1 small box spaghetti noodles, cooked according to instructions
  • 1/3 cup butter
  • 4 cups diced ham
  • 3 stalks celery, diced
  • 1 onion, diced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 can sliced mushrooms
  • 1/4 cup flour
  • 3 cups low sodium or unsalted chicken broth
  • 2 cups heavy cream
  • 1 cup Parmesan cheese
  • Panko brand bread crumbs 
  • Salt and pepper to taste
  1. Spray a 9 X 13 baking pan with cooking spray and lay the noodles evenly in the pan and set aside.
  2. Melt butter in a large fry pan and add the vegetables and stir over medium heat until the veggies are softened and tender.
  3. Add the ham.
  4. Add flour and stir until the mixture thickens.
  5. Add the chicken broth slowly while continuing to stir and then add the cream and heat through.
  6. Pour mixture evenly over the noodles, sprinkle with Parmesan cheese and enough Panko crumbs to lightly cover.
  7. Bake at 350 about 40 minutes or until the edges are bubbling and the topping is golden brown.
  8. Remove from oven and cut into squares to serve.

    While I do not consume pork or pork by-products, I shared this recipe with my sister-in-law and my mom (they live together). I suggested that they substitute the roast chicken leftovers and give it a try! They said it was fantastic and they would definitely make it again!
    Thanks for all those wonderful recipes that inspire me and cause me to create other meals simply by substituting a little here and there. After all, isn't that what sharing is all about? Give an idea to inspire another to create the same meal (or similar) and produce a wonderful and tasty result?

  61. Hi Lovella, With 5 kids at home, a shift working husband and a fulltime job I don't spend much time on the internet. Usually I squeeze in a few minutes on my lunchbreak to check on emails for our kid's activities for youth group or for our church activities and of course I check every day to see what might be cooking in your kitchens! It's very funny that when I look at a recipie and the pictures I try to guess who it is posting before I look at the name. My way of promoting your blog is by bringing food from your recipies to work, church and family functions. It used to be that people would rave about what I made , marvel at how I get it done with how busy I am and beg for the recipie. They still rave, but now they ask if it's from Mennonite Girls Can Cook Blog and it very often is. The recipies are straight forward and adaptable. I also get asked if I am mennonite when I bring in some of the more traditional items. I'm not but I take that as a high complement if I have replicated it that well.
