Potato Carrot Mash

This is such a delicious way to serve mashed root vegetables. They are a perfect addition to roast beef. Use leftovers for a pretty shepherd's pie.
  • 5 medium sized potatoes, peeled and cut in 1" cubes
  • 3 large carrots, peeled and sliced
  • 2 tablespoons butter
  • 2 tablespoons cream cheese
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup milk, heated
  1. Boil potatoes and carrots in the same pot until fork tender.
  2. Drain and mash potatoes and carrots.
  3. Add butter, cream cheese, salt, pepper, and hot milk. Keep mashing until well combined.
  4. Yield: 8 servings


  1. I bet this is delicious. Would make a good dish to take to a potluck. Also full of vitamin A!
