Almond Jam Bars

Sometimes I get carried away and cook too much jam and don't know how I'll use it all. These jam bars are the answer, great to pack in lunches too. You can make these with any jam you have on hand. You can mix a few different kinds of jams, a berry combo would be good. For this recipe I used peach and apricot jam mixed together.
  • 3/4 cup butter
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 1 1/2 cups of jam
  • 1/4 cup almonds, sliced
  1. Cream butter and sugar. Add egg and vanilla, mix well.
  2. Whisk together flour and baking powder, add to creamed mixture and mix until well blended.
  3. Press 2/3 of the dough into a greased 9" x 13" pan. Spread evenly with jam. Crumble remaining dough on top.
  4. Sprinkle with almonds.
  5. Bake in a 350ยบ oven for 35 minutes until golden in color.
  6. Cool and cut into bars.
  7. Serve warm or cold.
  8. Yield: 24 pieces

  3. I just finished baking a batch of these easy jam bars. I used cherry preserves which went perfect with the almond flavor. I may have to freeze them quickly or I may be tempted to eat these all day long & my hips can't afford to take on any more girth. Thanks for sharing another delicious recipe.
