Pear Puff Pancake

  
This is a great weekend breakfast treat. Put it together in 10 minutes and take your shower while it's in the oven.  It may just be better than eating out. This recipe can be doubled and baked in a 9X13 oven-proof dish.
Ingredients:
  • 2 pears, peeled and sliced
  • 3 Tbsp butter, melted and divided
  • 3/4 cup flour
  • 2 Tbsp sugar
  • 1/2 tsp salt
  • 3 eggs
  • 3/4 cup milk
  • 1 tsp vanilla
Method:
  1. Preheat oven to 400 F. Spray 8 inch round or square ceramic dish with cooking spray.
  2. In  saucepan, cook pears with 1 Tbsp of the butter for about 5 minutes, while you prepare the batter.
  3. In medium mixing bowl, combine flour, sugar and salt. Set aside.
  4. Beat the rest of the butter (2 Tbsp) with eggs, milk and vanilla, using a whisk.
  5. Add liquids to combined dry ingredients, stirring well with whisk. (Will be slightly lumpy.)
  6. Pour into prepared dish. Spoon cooked pears evenly over the batter.
  7. Bake for 30 minutes, until puffed and golden. Let sit for 5 minutes before serving.
  8. Dust with icing sugar and serve with maple syrup.  Serves 3-4

  6. This looks delicious and without the mess of making pancakes on the stove top and trying to keep them warm! I will try these for sure! Oh, and it's fresh maple syrup season here in Ontario too!

  8. Does the puff of the pancake flatten. Mine sure did when I took it out of the oven, or was that when I cut into it? Did I do something wrong?

  11. I made this for brunch today only baked it in a lg frying pan with lid on stovetop and it turns out great, puffed up beautifully. Bake on Med heat in a heavy skillet or fry pan, just make sure to keep lid on. I also make a fry pan pizza on stovetop with lid on. Tks for sharing this great recipe. It's similar to Seattle Dutch babies.

  12. We had this for lunch today. It was easy and delicious. We drizzled it with maple syrup and Greek honey yogourt. I think I'll try apples next with a bit of cinnamon. I love pears but don't always have them on hand. Thanks for the idea. Angharad

    1. I don't know if you saw Kathy's puff pancake - I make that gluten free, so I know this would work well too ... The easiest way to make this would be to buy a gf pancake mix and substitute 3/4 cup of that for the wheat flour.

    1. Jen, it is a Pampered Chef stoneware deep dish baker. It's not quite as large as a pie dish, about 8 inches across.

  15. We just made this for breakfast and used pie filling since we're trying to clean out the pantry prior to our move. It was too sweet! Sticking to your plain fruit next time. Just curious, how does it change if you mix the fruit into the recipe or add nuts? Does it still puff up?

    1. Sorry, I called you Jen in the previous comment... did not have my contacts in... Ha, ha! I would agree that pie filling would be kind of sweet. I have never mixed the fruit in, it kind of falls into the puff as it deflates anyways. I'm sure you could sprinkle nuts on top.
