Baked apples, comfort food for sure. This was indeed a special treat when my Mom would bake apples for dessert. Just a simple dish but oh so tasty. I baked these apples plain and simple with brown sugar, cinnamon, and butter because that's all my Mom ever did.
- 4 apples
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 4 teaspoons butter
- 2/3 cup boiling water
- Wash apples and using an apple corer remove the cores leaving approx 1/2" of the bottom of the apples intact. Set apples in an 8" x 8" pan.
- In a small bowl combine sugar and cinnamon.
- Stuff each apple with this mixture and top each one with 1 teaspoon butter.
- Add boiling water to the pan around the apples.
- Bake, uncovered in a 375º oven for 40 minutes, just until tender.
- Once the apples are removed from the oven, baste the apples with the pan juices.
- Serve just as they are or with a scoop of ice cream and a drizzle of caramel sauce.
- Serves: 4

ReplyDeleteOh these look so yummy! My mother did "fried" apples in a similar manner. The apples were peeled, cored and halved and then dredged in flour. Butter was melted in a sauce pan and the apples halves were placed on top and the core hole was filled with brown sugar and a sprinkle of cinnamon. Cover and simmer until tender. This was a delicious side dish to sausage or ham. Mmmmmm - thanks for the reminder!

ReplyDeleteYUMMY! I love fruit desserts best of all!! (my mom made microwave baked apples when she was selling her house. Filled the whole house with that wonderful apple pie aroma.)

ReplyDeleteThe only thing I do differently is add raisins to the brown sugar & cinnamon. My mom made these often in the fall when we were kids.

ReplyDeleteWe had these as children - the only differences was sultanas pushed down the centres and golden syrup swirled over the top - they were a HUGE favourite.
ReplyDeleteThese baked apples look gorgeous! For something different try making a blushing baked apple by decreasing sugar & adding cinnamon imperials ( Red Hot Candies) This gives them a candy apple taste & a beautiful color! And of course if doing this, you do not add additional cinnamon.
ReplyDeleteAt times when my apples are not as sweet or flavorful as I would like, I substitute apple juice for the water when I am making them.

ReplyDeleteI've never made baked apples, nor even liked them, because it never occurred to me that you don't have to have raisins in them. D'oh! So this is going to be dessert tonight for sure. May even try them with a little chopped up rhubarb in the sugar, since I have so much of it.
