This is one of my favorite salads in summer when the cucumbers are fresh from the garden. My Mom used to mix a cucumber salad with vinegar, salt, and onions but I prefer them this way.
Another favorite way I like to eat them is to cut the cucumber in half, sprinkle salt on one half of the cucumber and then rub the two halves together. A nice snack indeed.
- 4 - 7" cucumbers
- 3 tablespoons mayonnaise
- 2 teaspoons vinegar
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon fresh dill, chopped
- Peel cucumbers and cut in 1/8 to 1/4" slices. If using fresh cucumbers you can leave the peel on if so desired.
- Whisk together mayonnaise, vinegar, salt, pepper, and dill.
- Pour over cucumbers and mix.
- Refrigerate until ready to serve.
- Serves: 5 to 6
My favourite cucumber salad is a similar style but with different flavours:

- 1/2 tbsp sugar
- 1 tsp lemon juice
- pinch of salt
- fresh dill (optional)
Whisk together dressing ingredients, then stir in enough cucumbers (thinly sliced) so that they are covered. Serve immediately or chill before serving.
Betty, does this dressing have a lot of 'bite' to it? By using vinegar but no sugar, does that make it highly acidic?
ReplyDeleteAccording to my taste it doesn't really have much of a bite to it. You can add a bit of sugar if you like.
DeleteMy Grandmother used to make them like Kate's, with that dollop of sour cream...so refreshing..
ReplyDeleteI just cut up a bunch of cucumbers add some sour cream... or buttermilk, green onion a little dill .. and a chopped hard boiled egg.... best lunch you ever had.
