Lemon Marshmallow Fruit Dip


Looking for a fruit dip you can make a day ahead of your party. 
This tangy dip pairs beautifully with summer fruits.
  • ½ cup sugar
  • 1 teaspoon cornstarch
  • 2 egg yolks, beaten
  • Juice of 1 lemon and enough water to make 6 tablespoons
  • 1 tablespoon butter
  • 3 cups mini marshmallows


  1. In a small saucepan, mix sugar and cornstarch.
  2. Stir in lemon juice, egg yolks and water.
  3. Stir over medium heat until it is thick and bubbly.
  4. Add marshmallows and softened butter and stir until nearly melted.
  5. Cover surface with plastic wrap and  chill.

  8. I made this fruit dip last night and we couldn't dip fruit in it b/c it was like jello. I followed the directions so I don't know why it never turned out.

    1. Danielle, I am sorry it didn't turn out for you. I agree that it is quite stiff but we still enjoyed it with our fruit. If you like the flavour but would like a softer consistency you could add more water when making it and cut back on the butter which of course becomes solid once it is cold.
