Salad:
- 6 cups of mixed greens or baby spinach leaves
- 1/4 cup minced chives
- 1 1/2 cups chopped cucumbers
- 1 cup blueberries
- 1/2 cup crumbled feta cheese
- 1/4 cup roasted sunflower seeds
- In a large bowl, combine greens, chives, cucumbers, and blueberries.
- Toss with vinaigrette dressing and place on serving platter.
- Sprinkle with feta and sunflower seeds.
- Serve with additional dressing on the side.
- 1/4 cup white wine vinegar
- 3 tablespoons liquid honey
- 1 tablespoon mayonnaise
- 1 teaspoon dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large clove garlic, minced
- 3/4 cup olive oil
- Whisk together vinegar, honey, mayonnaise, mustard, salt and pepper.
- Gradually whisk in oil.
- Blend in minced garlic.

ReplyDeleteDo any of you ladies use Clearjel for canning now instead of flour or cornstarch? I have been reading everywhere and folks are saying not to use cornstarch or flour.
And if you do...where can I buy this in BC.

DeleteI really don't know where to buy it in BC... I have looked and have not found it. I know American sites will ship to Canada so I guess its not 'forbidden', but just hasn't found its way yet onto our Canadian shelves!
Maybe if enough people ask for it... grocery stores will order it in.
It does sound like a good product to use!
I'm just getting into the whole concept of fruit in my green salads. I like this one. I'm inspired to also try it as a vinaigrette: blueberries, some lemon juice and olive oil.

ReplyDeleteWe have cucumbers in the garden and I bought blueberries in our village and had too much of both, so this recipe was perfect to use what is in season and was delicious at that. The blend of feta, blueberries, crunch of the seeds and the slightly sweet dressing was a good combo. This salad is on my fav list.
