Orange Fig Muffins


This recipe is an old one I like to go back to again and again. I have usually made it using chopped dates.

Ingredients:
  • 1 large, seedless orange
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup oil
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 cup chopped dried figs (12 figs)
Method:
  1. Peel orange, using potato peeler. Remove pith and discard. Divide orange into segments. Put thin peel, orange segments, sugar, eggs and oil into blender and blend until it resembles a smoothie.
  2. Add these wet ingredients to combined dry ingredients in bowl, stirring just until mixed. If batter is too thick, add 1/4 cup orange juice - it will depend on how juicy the orange is.
  3. Stir in chopped figs.
  4. Divide into 12 prepared, medium muffin cups.
  5. Bake at 400° F for 15 - 20 minutes.

  2. Thank you for the recipe, Anneliese. I love orange anything and I always forget about figs but they're good for you and I bet they would be great with the orange flavor. I can't wait to try these....refreshing for summer too.
