Orange Fig Muffins

This recipe is an old one I like to go back to again and again. I have usually made it using chopped dates.

  • 1 large, seedless orange
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup oil
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 cup chopped dried figs (12 figs)
  1. Peel orange, using potato peeler. Remove pith and discard. Divide orange into segments. Put thin peel, orange segments, sugar, eggs and oil into blender and blend until it resembles a smoothie.
  2. Add these wet ingredients to combined dry ingredients in bowl, stirring just until mixed. If batter is too thick, add 1/4 cup orange juice - it will depend on how juicy the orange is.
  3. Stir in chopped figs.
  4. Divide into 12 prepared, medium muffin cups.
  5. Bake at 400° F for 15 - 20 minutes.

  1. That sounds delicious Anneliese. I really like the taste of citrus in baking. Lovely presentation too!

  2. Thank you for the recipe, Anneliese. I love orange anything and I always forget about figs but they're good for you and I bet they would be great with the orange flavor. I can't wait to try these....refreshing for summer too.

  3. I have made this one often as well. Nothing gets easier than throwing it into the blender. I can almost smell them.

  4. This looks good. I just need to beat the birds to the figs someday.

  5. These look and sound delicious Anneliese!
