Creamy Broccoli Bake


This is a casserole presentation of broccoli that is nice for a change and would work well as a side dish with a barbecued steak or chicken breast.

Creamy Broccoli Casserole

1-1/2 lbs. of fresh broccoli, cut into pieces
1- (10-3/4 oz.) can condensed cream of mushroom soup
1/4 cup mayonnaise
1/2 cup shredded sharp cheddar cheese
1- tablespoon chopped pimiento
1-1/2 tsp. fresh lemon juice
1/3 cup golden round cracker crumbs (6 crackers)

Preheat oven to 350 degrees.
In covered microwave safe dish cook broccoli with a little water for 5 minutes on high. Drain. Turn into 1-1/2 court oven safe casserole dish. Combine soup, mayonnaise, cheese, pimiento, and lemon juice. Pour evenly over broccoli. Top with cracker crumbs.
Bake in 350 degree oven for 35 minutes. Makes 6-8 servings.

    1. I was going to ask what Cracker crumbs are too! I may google it - we may have something similar in the UK :)
      It sounds lovely - we'd love this with (as you suggest) chicken breast or steak, along with tatties (we can't do without our potatoes here!)

    3. Any buttery crackers would work. You just have to break them up into crumbs. Maybe I'll add another photo...

  2. This looks so yummy, but we don't use canned soups. What would you suggest instead? (To be honest, I wish all the recipes on here were made without pre-packaged ingredients just so we could try them all. They always look so temptingly delicious, but we're just an "ingredient" family without soups, cool whip, and other stuff like that.)

    1. Inkling, What do you usually use instead of canned soups? Do you have substitutes already in your repertoire? If not, you could substitute your basic white sauce using chicken broth and milk as your liquid and throw in some fresh mushrooms. For cool whip you could always try heavy whipping cream.

  3. i make something similar to this but without the pimento and lemon juice. i use bread crumbs on top and the recipe is called broccoli puff!! i love it and usually have it with a bbq!!
