Honey Almond Oatmeal Spelt Cookies

Spelt flour is gaining popularity for its nutty texture and high protein content. It produces a tender cookie and pairs beautifully with oatmeal and almonds for a great cookie which is great for the freezer and lunch boxes.


  • 1 cup butter
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 cup liquid honey
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 cups spelt flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups old fashioned oatmeal
  • 1 1/2 cups chopped natural almonds (skin on)
  • 1 1/2 cups raisins
  1. Preheat oven to 375 F
  2. Cream together the butter, sugars and honey.
  3. Add the eggs and vanilla and combine.
  4. Add the flour, baking soda, baking powder, salt and oatmeal in the order given.
  5. Add the almonds and raisins.
  6. Drop by spoonfuls on parchment lined cookie sheets. Flatten slightly with a fork (the dough will be sticky).
  7. Bake until golden brown. Cool on cookie sheets as the cookies will be quite soft until they cool.

  2. These look like the oatmeal cookies my mother used to have baking when we came home from school. Now I'm hungry. I am not sure if I have have access to Spelt flour in this area but we do have a large Mennonite community so possibly at their store. Surely regular flour can be substituted can't it??

  4. Congratulations! As an avid follower, I love reading and trying many of these recipes. Have you ever made anything (cookies, cakes, ect.} without dairy, eggs sugar, corn or wheat? I've be put on a very restrcietd diet and amd quite tired of eating the same thing? Any advice would be helpful!

  7. Granny Annie, You sure could use any kind of flour in this recipe. Try whole wheat flour or just white. .either way they'll be nice and crunchy.
