This is a favorite served in our home along with BBQ. This recipe is the best Sopa this side of Paraguay. It is often difficult to get something to taste like it's origin but this is bang on. To top it off it is gluten free and I felt good about being able to serve this to my friend who has Celiac. It is moist and gooey with cheese, a real good treat.
- 1-500 ml container of 1% Cottage Cheese
- 4 cups of low fat sharp Cheddar or a combination of your favorite kinds of cheese
- 1 small onion chopped fine*
- 4 eggs
- 1/4 cup of oil (original recipe calls for 1/3 cup but I don't notice a difference)
- 1 cup milk
- 1 1/2 cups corn flour (not corn meal)
- 1 cup of frozen corn (optional) I didn't add it this time.
- Combine all ingredients and bake in a well greased (or sprayed) 9x13 pan.
- Bake for 40-45 minutes in a 375 degree oven.
- Serve warm or room temperature.
- * Lately I have sauteed the onion to soften it a bit instead of adding the onion raw before adding it to the batter.
Hmmm...I'm wondering if I tried this bread at the Paraguayan Pavilion at Folklorama last summer. It looks tasty...and I might just give it a try in my oven one of these days.

ReplyDeleteAs soon as I read this and saw the picture I had to rush to our one grocery to get cottage cheese. They did not have low fat, so all my ingred. were regular. I sub. 1/2 cup pepper jack cheese and added crumbled bacon. Smells delish. Ijust got it out of the oven. I would recommend low fat if you can find it and since there is so much fat in the cheese it might be possible to skip that also. Wonder if adding a half tsp of soda would cause it to rise even higher. Hmmmm
ReplyDeleteCorn flour can be bought at Authentic Foods, if you can't find it elsewhere. They also have a wonderful superfine white rice flour.

ReplyDeletesquiggins...i am thinking that adding b-soda would change the texture and this is meant to be a heavy moist dense kind of bread.
ReplyDeletegreat idea with the add ins-. i personally have never added th meat but i have switched up the cheeses alot. this can be pretty versitile with added chilis or red pepper etc...the skies the limit if you have imagination :^D.

This looks fabulous. And YAY! for gluten free :) A question: I can't get cottage cheese here, would the recipe work without it?
ReplyDeletethe question to wether something else would work without cottage cheese. i don't know because i have never tried it. do you have anything similar in your area. try substiutions. that is the fun part of cooking and baking is the experimenting. good luck finding something that would work.
