Today was a comfort food kind of day and this dish tops my list of comfort foods.
For many years my children preferred it to the boxed mac and cheese
and it really doesn't take much longer to make from scratch.
- 2 cups macaroni - cooked and drained
- cheddar cheese (old/sharp is best) coarsely grated.
- 1/4 cup butter
- 1/4 cup flour
- 2 cups milk
- salt and pepper to taste
The method is the same.)
- Melt butter in 8 cup microwavable bowl or medium saucepan.
- Stir in flour with a wire whisk until smooth.
- Very gradually add milk, stirring smooth with each addition.
- Microwave for 1 minute at a time, stirring well each time until sauce bubbles or cook over medium heat, stirring constantly.
- Add salt and pepper to taste.
- In buttered casserole dish, place a layer of cooked macaroni.
- Pour 1/2 of white sauce over to cover.
- Sprinkle with grated cheese.
- Repeat layers ending with cheese.
- Bake at 350 degrees for about 30 minutes or until it bubbles at the edges.
Oh yum. This is definitely one of my kids favorites -- and they're teens and twenties. I like to come visit here for ideas and I thought I might find something to try for my weekend cooking. Thanks for the inspiration!

Ahhh....see....now THAT is comfort food! Thanks for the post! A big time favorite at home....and everyone has a twist on how to prepare it. I like the hint of microwaving the sauce so that my son can now make his own.! Perfect! Thanks for the post today...this is chilly weather food for the weekend for sure!

ReplyDeletewhat? that must have been before I can remember. Once I moved out on my own, I went NUTS for KD... still make it often, because of a wierd craving. That being said, nothing beats THIS mac'n'cheese. Not even Kraft. My family loves it. Thanks Mom.

ReplyDeleteUmm that is definitly comfort food at its finest. Mac and cheese is a favorite in our house as well. The kids love the boxed stuff, but when i make it from scratch they tell me to make it that way from now on. I love you whisk.

ReplyDeleteThis mac and cheese (with the cheese grated into the sauce) was one of the first things I learned to cook in gr 8 home ec and, with no Kraft Kinners growing up, I thought this was the best! This is what I made for our kids. I remember one of my girls was babysitting somewhere and called me to ask how to make Kraft Dinner and I didn't know, without reading the instructions. For some reason after that I started buying KD because it was such a novelty!Now that became a long story!

Nancy - I don't measure the cheese - just enough to generously cover the sauce on each layer. Maybe 1 - 1 1./2 cups greated?

Love this mac and cheese- I make it the same way, except zi have always melted the grated cheese into the white sauce after it thickens on the stove. I might try it your way for a change. Maybe it tastes even cheesier? :)

ReplyDeleteI make this all the time! I've recently tried cutting the milk in half and adding roasted butternut squash to the sauce - I use my immersion blender to make the sauce smooth. It's yummy and the kids can't tell the difference!
