Lemon Basil Carrots


My son isn't a big fan of carrots, but he LOVES these. I use the sauce on other veggies too and it is something that gives just plain veggies a bit of punch to them.
  • 1 lb. carrots or green beans
  • 2 tbsp butter
  • 1 tbsp. fresh lemon juice
  • 1/2 tsp. garlic salt (or powder if you want to reduce sodium intake)
  • 1/2 tsp. dried basil
  • freshly cracked pepper to taste
  1. Steam carrots or green beans until tender crisp.
  2. Strain.
  3. Melt butter, stir in other ingredients and toss with the carrots.
Enough for 4 servings, or 2 teenage boys.

  5. Looks fabulous. I always just do carrot coins. With two toddlers, I have to cook them Very Well. I think I'll try it this way.

    I never never serve cooked vegetables without butter. What would be the point? :)

  6. I love the idea of lemon and garlic added to these. I often make carrots with just butter, basil and a tbsp. of honey but it will be fun to try your version. Thanks Charlotte.

  9. Try dried sweet basil instead of regular basil. My family loves carrots this way. I'm going to add the garlic salt and fresh cracked black pepper next time I make them.
