Mini-Chip Shortbread Butter Crisps

There are so many variations of shortbread out there so I though I would add one more to the collection. They are my oldest daughters favorite, well one of her manyfavorites.

  • 2 1/2 c. flour
  • 1/2 tsp. salt
  • 1 1/2 c. butter
  • 1 c. icing sugar
  • 2 tsp. vanilla
  • 1 1 /2 c. mini chocolate chip (I mix half dark and half milk chocolate)

  1. Cream butter, icing sugar and vanilla.
  2. Add flour and dry ingredients.
  3. Fold in chips.
  4. Make 1 " balls and flatten slightly.
  5. Bake at 325 for 10 minutes.
  6. Makes approximately 6 dozen.

  1. Oh you know me Char....a chocolate chip cookie of any sort is a big time hit at my house. These look scrumptious! I shall be obliged to try these of course!!! :P

  2. Mmm..I can already 'feel' those melting in my mouth! Thanks for the recipe Char!

  3. I'm so glad that you girls are putting up all the cookie recipes. My daughter is having a Christmas Cafe this Sat - singing Christmas songs (her part) along with refreshments (my part). It's a fund raiser for her mission trip. I'll be using some of these recipes. I've already tried the ginger cookies and they were delicious!

    Thanks :)

  4. These are my absolute favourite! I wonder if you and my mom found the same recipe somewhere? I don't make them so much anymore because my hubby doesn't like them and then I eat too many!

  5. Chocolate AND butter? Has to be good! My hubby will want to eat the dough! heehee!

  6. I used all dark chocolate today, and they are wonderful. Thank you girls. You really are the best cooks out there.
