Shortbread Cookies

This recipe was from my Mom's friend Esther Moore. Her and her husband John were our pastor couple when I was growing up in Victoria. He was a musician as well and afew of his songs are published in church Hymnals. One of my favorites of his is Burdens are Lifted at Calvary.
These cookies are easy, and they melt in your mouth.
1 cup softened butter
4 tbsp white sugar
2 1/2 -3 cups flour
Whip together butter and sugar. Add 2 cups of flour and continue to add flour until dough comes together in a soft ball. It will be soft but manageable to roll out on a floured counter. Roll out to 1/4 " thick and cut with cookie cutters. Leave plain or decorate with colored sugar sprinkles.
Bake @ 325 for 12 minutes. Let rest on pan for one minute and remove to a cooling rack.

It is so wonderful to read recipes that have so few ingredients, and all good things in them rather than a list of complicated and artificial ones.

    Whipped Shortbread

    1 pound butter {~= 454grams} NO substitutes
    1/2 cup cornstarch
    3 cups flour
    1 cup icing sugar
    1 teaspoon vanilla

    Cream butter well.
    Add remaining ingredients.
    Beat well with an electric mixer until of whipped cream consistency.
    Drop from spoon, or use a cookie press, onto a greased cookie sheet.
    Using a scant 1/2 Tablespoon per cookie makes 100 cookies.
    Cookies expand when baking.
    Decorate with one-quarter of a maraschino cherry. (Optional)
    Bake at 350°F for 10-12 minutes

    For me, these cookies mean Christmas. I've baked them in YTH, YYL, YYQ, and yes, even in YRB. I wasn't allowed in the kitchen in Rez, but one of the cooks agreed to make them for me. (Yes, I took my cookie press up there!) It was a sight I'll never forget, in the middle of a dark season, the big guys who drove the heavy equipment, walking around the gloomy hallways with their baseball-glove-sized hand stacked with these delicate cookies, popping them into their mouths and grinning from ear to ear. The cook could't make enough of these cookies!

    'Nother Christmas memory. My brother-in-law lost his thumb in an accident. He was thrilled he could operate the cookie press and join in on the Christmas Baking in the kitchen. The big laughs came when we saw the expression on the face of his Chocolate Lab, when a slightly over-cooked cookie was tossed his way. The dog knew something "Food" was tossed, he knew he caught it, but the cookie dissolved instantly in his slobbery mouth, and he didn't know where it went!
