These little desserts are pretty and delicious. Unfrosted cookies freeze well and the frosting and glaze will keep in the fridge for at least a week if you don't want this many desserts at one time.
Sugar Cookies for the base:
- 1/4 cup butter
- 1/4 cup shortening
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons milk
- Cream together butter, shortening, and sugar.
- Add egg and vanilla, beat until creamy.
- Combine dry ingredients and stir into creamed mixture alternately with milk until dough comes together in a ball. It will be slightly sticky. This dough can be refrigerated and baked later.
- Using a little extra flour, roll out dough to 1/4" thickness.
- Cut with a 2" cookie cutter and place on parchment lined cookie sheets.
- Bake in a 400º oven for 8 minutes or until edges turn golden.
- Yield: 30 cookies.
- 2 packages ( 8 oz each ) cream cheese
- 2 containers (8 oz each ) whipped topping
- Beat softened cream cheese and fold in the topping.
- Spread frosting on cookies and arrange your choice of fresh fruit on top. Drizzle glaze over top.
- 1/2 cup white sugar
- 1 tablespoon cornstarch
- 1/8 teaspoon salt
- 1/2 cup orange juice
- 1 tablespoon lemon juice
- 1/4 cup water
- In saucepan combine all ingredients and bring to a boil, stirring constantly.
- Cook until thickened, approximately 2 minutes.
- Cool and drizzle on fruit.
- Chill for 1 hour and serve.
