Apple and Cabbage Coleslaw

This is a quick and easy salad to put together and tasty enough for everyday or serving company. A bag of Cole Slaw mix is the secret.
  • 1 bag of coleslaw mix
  • 1/4 cup of finely chopped red onion
  • 1/2 cup of plumped raisins (soaked in hot water and drained)
  • 1 large apple chopped with the peel left on
  • 1/2 cup of toasted slivered almonds
  • 3/4 cup of light mayonnaise
  • 1/4 cup of sugar
  • 2-3 tablespoons of vinegar
  1. Combine the Cole Slaw mix with the onion, apples and raisins.
  2. Combine the Mayonnaise, sugar, vinegar.
  3. Pour over Cole Slaw mixture, and sprinkle with almonds.

  6. I can eat the whole batch myself! My Mother-in-law used to throw a small can of pineapple, crushed or tidbits into the mix and boy was that good too! So much more fun that plain coleslaw! thanks for sharing!

  10. Golly gee, this looks delicious!!! I burnt Hubs and Geek Son out on slaw one summer durin' combine season. Seemed we had an abundance of cabbage that year and I packed them a lunch every day.

Maybe, just maybe with a little variation I could get 'Farm Boy' to eat slaw again. I'm swipin' this one sister!

    Thanks!!!

God bless ya and have yourself a beautiful day!!! :o)

  12. My husband is not fond of cabbage at all. However somehow this is now one of the salads he requests the most. Our family really enjoys it. Thanks for all your great recipes. So down to earth and user friendly.

  14. Since finding your recipe it has become one of our very favourite. I do substitute craisins for the raisins, as we like them better and they also add more colour. Thank you for this wonderful way to enjoy coleslaw!

    1. It depends on what else you are serving it with. This usually feeds 6-8 people if not more.
