Pumpkin Spice Cookies


These cookies are more cake like than chewy. They are very moist and have just the right spice...

Ingredients:
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 4 teaspoons cinnamon
  • 2 teaspoons pumpkin spice
  • 1 teaspoon salt
  • 1 cup butter, softened
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 15oz. can pumpkin puree
  • 2 eggs
  • 2 teaspoons vanilla extract

For glaze:
  • 2 cups confectioners sugar (icing sugar)
  • 3 tablespoons milk
  • 1 tablespoon butter, melted
  • 1 teaspoon vanilla extract
  • Chopped nuts of choice 

Directions:
  1. Preheat oven to 350 degrees. 
  2. Combine flour, baking powder, baking soda, cinnamon, pumpkin spice, and set aside.
    Cream together the butter, white and brown sugar. 
  3. Add pumpkin, eggs, and 2 tsp. vanilla to butter mixture. 
  4. Beat until creamy. 
  5. Mix in dry ingredients. 
  6. Drop on cookie sheet by tablespoons.
  7. Bake for 15 to 20 minutes in the preheated oven. 
  8. Cool cookies.
  9. Drizzle glaze over cookies with a fork.

To make glaze:
  1. Combine confectioners' sugar, milk, melted butter, and vanilla. 
  2. Add milk as needed to achieve a good drizzling consistency. 
  3. After you drizzle the cookies add some finely chopped nuts if you like.

This recipe will make 5 dozen cookies.

  1. These look so good! Have you ever tried caramel icing on pumpkin cookies? I made some a few weeks a go and that combination was quite tasty!

  2. I just saw a coupon for pumpkin cookie mix and almost clipped it, but then I thought I'd do better looking up a recipe and making them from scratch. I'll consider this a sign.

  8. I am wondering if you could tell me what Pumpkin spice is? When I have baked with pumpkin I add a lot of different spices but have never used this one. Could a person make their own?

  9. Debbie M., Pumpkin Spice is a combination of Cinnamon, nutmeg, ginger and cloves. In the U.S. you can buy Pumpkin Spice in the spice section. I'm sure you could substitute Pumpkin spice with cloves and nutmeg in this recipe and it would be good...

  11. Just a quick question. In the recipe it says 2 tsp. vanilla, but in the directions you say add 1 tsp.? Is the extra tsp. for the glaze? Thanks, Sherry B.

  12. Sorry Sherry B., you do add the 2tsp. of vanilla (I doubled the recipe for the post and copied 1 tsp. of Vanilla instead of 2 from the original recipe). So 2 tsp. for the cookies and 1 tsp. for the frosting.
