Mexican Meatballs



This is one of my standby recipes that has been a favorite of our family since the boys were little.
You can adjust the spiciness of the dish by using less salsa.

  •  2  pounds lean ground beef
  • 1 medium onion, chopped fine or grated
  • 1 clove garlic, minced
  • a small handful of fresh chopped parsley
  • 1 package taco seasoning
  • 1 egg
  1. Mix together all the meatball ingredients in a medium mixing bowl.
  2. Line a cookie sheet with parchment paper for easy cleanup.
  3. Using a small spring-loaded ice cream scoop, make meatballs and put them on the cookie sheet.
  4. Bake them at 400 for 15 minutes.
 Mexican Meatball Sauce
  • 1 can tomato soup
  • 1 can mushroom soup
  • 1 can full of salsa  (fill one of the emptied soup cans)
  • 10 large button mushrooms, sliced
  • 1 tablespoon oil
  • 2 cups of shredded cheddar or a tex-mex mix
  1. In a large oven-safe Dutch oven, fry the mushrooms in the oil over medium heat until the mushrooms have released their liquid and the mushroom begin to brown.
  2. Add the remaining liquid ingredients and bring to a simmer.
  3. Add the cheese.
  4. Add the meatballs and cover and bake at 350 for one hour.
Serve over rice and have a bowl of tortilla chips to dip into the extra sauce.

  11. Just made this and got rave reviews from Hubby. Used ground turkey, didn't have Taco seasoning so I made up my own spice mix. Added two cans of salsa and 1/4 of water to loosen the sauce a little.
    This would be a great dish to bring to a potluck, super easy to double or triple.

  12. I tried this today, made it for lunch. My brother is now finishing it up for dinner, made approximately 2 large guy portions, and one normal female portion. It was VERY tasty, I enjoyed it. I will definitely make this again.

  13. I have been to the site quite a while ago, and had bookmaked it to come back to. Today with a little extra time I did come back and found this recipe. I cooked it for supper tonight and used spagetti noodles instead of rice to serve it over. It was a big hit! Since there are only the two of us, I put the extra noodles and the rest of the meat balls and sauce in a small oven dish and will warm it tomorrow for out lunch. Dh said this is a keeper, high praise from him.

  14. I was making a Mexican themed meal for 16 people on the weekend. I didn't have time to do the meatballs so I improvised this recipe a bit and it was great. The sauce portion of the recipe covered 22 pieces of chicken nicely. I added 1/2 pkg. of taco seasoning to the sauce and used the cheese portion to sprinkle on top in addition to cut up green onions. Anyway, if anyone else is in a rush, this version too makes a great dish and the sauce was very tasty over rice. Thanks Lovella!

  16. Well folks I just have to tell you about supper tonight.
    Well Dh suggested I use the sauce recipe From the Mexican Meatballs and instead of the meatballs just chop up some of the Ham I cooked for supper last night and put it in the sauce and bake it in the oven.
    So I looked at what I had, and I used:
    can tomato soup
    can of mushroom soup
    I didn’t have fresh mushrooms on hand so.... Used a well drained can of mushroom pieces
    Then I went for the salsa and I only had 1/3 of a jar, so added that, and some left over spaghetti sauce ( I had added chopped onion, celery, and my own stewed tomatoes and finely chopped garlic, when I made it). i put in what I thought would bring the salsa portion up to one soup can full. Then I added some chilli powder a big tablespoon full, and a small tin of green peppers ( the ones they sell in the Mexican section of the stores in the States ,,,, I’ve never seen them here). heated them on top of the stove, mushrooms first drained well and sautéed in the oil, then the rest added, mixed and heated on top of the stove. I had the cheese and grated it and added it above. Then added the chopped ham and put the works in the oven for an hour at 350 degrees.
    While that was cooking I made up the rice ( rinsed well, brought to the boil , and turned off and left to cook with the lid on and I plopped my oven mitts on top to keep it warm).
    Delish! The only change I’d make next time is to add a few frozen green peas when I put the works in the oven. I’d do that for the colour and the added veg.
    Since we enjoyed the meatball recipe so much I wanted to give back and we just enjoyed this supper so much. It will make an appearance agin at lunch tomorrow!

  17. Thanks for this recipe, I was looking for a different meatball recipe and hoped I could count on MGCC and I could. I did not have the soups here in Germany so used canned tomatoes, sour cream and cream.
