Ingredients:
Filling:
- 1 - 8 oz pkg cream cheese
- 1/3 cup sugar
- 1 egg
- pinch salt
- 1/2 tsp vanilla
- 1/2 cup chocolate chips, optional
- 2 1/2 cups flour
- 1 1/4 cups sugar
- 1/3 cup baking cocoa, sifted
- 1/2 tsp salt
- 1 1/2 tsp soda
- 1 large egg
- 1 1/2 cups water
- 1 1/2 Tbsp vinegar
- 1/2 cup oil
- 1 tsp vanilla
- 1 can cherry pie filling
Method:
- In small bowl, blend filling ingredients until smooth, with mixer. Set aside.
- In medium bowl, combine dry ingredients.
- In large mixing bowl, beat egg, water, vinegar, oil and vanilla.
- Stir in dry ingredients, until smooth. Will be a tad runny.
- Fill well greased mini muffin tins 3/4 to almost full (1/2 full if using medium size) .
- Drop a 3/4 tsp of cheese filling in center of each mini cupcake. If using medium size cupcakes you can add a small tsp of cherry filling or some chocolate chips beside the cream cheese.
- Bake mini muffins at 350º F for 13 min ( medium size for 18 - 20 min).
- Let cool in pans for 5 - 10 minutes before gently removing to wire rack. These freeze well.
- Serve with a dollop of cherry pie filling on top.

It's 6:30 as I look at this lovely picture and then smiled at seeing Charlotte ask for one at 5 in the morning .. .I'll have one too please .. .I'll have one too please ..and my coffee isn't even ready yet.
ReplyDeleteWow, these sound delicious and look beautiful too! Just a quick question: when you drop a tsp. of the cheesecake mixture onto the cupcakes, do you press it down at all or just leave it sitting right on top??
ReplyDeleteBonnie
All I can say..'I want one now'!!
ReplyDeleteJust looking at the photo, I thought that I had missed First Event.
ReplyDeleteLooks lovely and festive.
A great addition for that festive occasion coming around the corner.
Hi Bonnie . . . no I just drop the cheese on top and it kind of sinks into the batter.
ReplyDeleteI was a bit concerned that the cherry on top would slide down, but it didn't... in fact I refrigerated the left over cupcakes in a sealed tupperware and they were just as good the next day!
I've made these before and they are yummy! I didn't know about the cherry pie filling....great idea! Extra yummy!
ReplyDeleteus too, over at our house

ReplyDeletethese look amazing
ReplyDeleteooo, I have never made these with the cherry pie filling. Adds a nice splash of color, especially for Christmas!
ReplyDelete-de
My grandmother made these for every holiday. Several of my cousins and I have continued the tradition. I'd never seen the cherry pie filling version before. We always made ours with chocolate chips. I usually make massive batches of these and give away as christmas gifts. They freeze well. One thing that I have done to speed up the process is put the filling in a gallon ziploc bag, and the cake batter in another gallon ziploc bag. I make the mini version and just pipe all of the batter in and then all of the cream cheese mixture.
ReplyDeleteJust took them out of the oven. . and now I have to wait until company arrives for Christmas eve. . they look wonderful.
ReplyDeleteOh my....did these ever turn out lovely! My staff were in awe of these....and I made a batch of very mini little cakes for a neighbour's 50th birthday party. They freeze well. Super.
ReplyDeleteWell, well, well...I made these with the addition of the mini chocolate chips in the cream cheese mixture and took them to a 'cake walk' at my daughter's school...HUGE HIT!
ReplyDeleteP.S. Only 39 of the 48 cupcakes made it to the cake walk...snicker snicker snicker.
Is there a way to print this awesome recipe? I can't see the 'Print' button. Thanks for your help!
ReplyDeleteAbsolute favourites over here! Never thought to put a cherry on top - brilliant!
ReplyDeleteto anonymous - about the way to print this awesome recipe. Right after the recipe there is a light blue section that goes from left to right, about the same width as the recipe. In the upper left hand corner of that blue section there is a tiny picture of a printer, and the word "print". I don't know computers, but I'm guessing you'll get the recipe popping out of your printer if you click on "Print".
DeleteThank you kindly! I must have missed it. =)
DeleteThanks for posting. I'm going to try these for sure this Christmas especially as they freeze well. Just an idea from Pinterest...prefreeze Ferrero Rocher hazelnut candies - push one into cheesecake mixture in each unbaked cupcake - I've tried this with frozen truffles and the result is a cross between a mini cheesecake/molten lava cake. YUM.
ReplyDeleteWill for sure make them, can you freeze them? hope some one give me an answer to that,
ReplyDeleteThese freeze well. Add the cherry on top just before serving.
DeleteThank you, Anneliese .. I've been wondering what to bring for our complex Christmas potluck banquet! You just gave me the answer ! Very pretty, and festive with the red on top !
ReplyDeleteYUM! Please pass the tray!
ReplyDeleteWhat a pretty and elegant little dessert! They look delicious too! These may show up at our Christmas buffet this year...
