Pineapple Rolls

These pineapple rolls are a wonderful addition to any brunch. They also are delicious cut in half, spread with butter and grilled.
  • 2 cups scalded milk
  • 1/2 cup sugar
  • 1/3 cup butter, melted
  • 1 teaspoon salt
  • 2 eggs, room temperature
  • 7 to 8 cups of flour
  • 2 tablespoons instant yeast
Filling:
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup crushed pineapple, drained
  • 1/2 cup pineapple juice, which you just drained from the can
  • 1/3 cup sugar
  • 1/4 teaspoon salt
Glaze:
  • 1 1/2 cups icing sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla
To make the dough:
  1. Scald milk, add sugar, butter, and salt. Cool to lukewarm and add eggs which have been whisked.
  2. Mix in 4 cups of flour with yeast. Stir in remaining flour one cup at a time to form a soft dough. Knead until smooth and elastic.
  3. Cover and let rise until doubled for 1 hour.
For filling:
  1. Melt butter in saucepan, stir in flour till smooth.
  2. Add crushed pineapple, pineapple juice, sugar, and salt.
  3. Bring to boil and cook for over medium heat until thickened. Remove from heat and cool.
Preparing Rolls:
  1. When dough has risen, punch down and turn onto a lightly floured surface. Roll into a 24" x 12" rectangle.
  2. Spread filling within 1/2" of edges. Roll up jelly roll style, starting with long edge, pinch seam to seal.
  3. Cut into 16 pieces. Place close together in two 9" by 13" greased baking pans.
  4. Bake in a 350ยบ oven for 35 minutes or until golden. Remove from pans and cool.
  5. While still warm drizzle with glaze.
Some of you have been asking about letting the pineapple rolls rise before baking. I don't but I'm sure it's okay if you do.
I will also add that you could stir in the flour a cup at a time. That way you don't use any more flour than necessary.

  2. These are gorgeous! I wish I had the skills to make cinnamon or pineapple rolls - or to work with yeast period. But, sadly, I don't so I have to admire everyone else's rolls.

  14. Those look so delicious! My new standby is the No Knead Cinnamon Buns recipe from this site because they're 'idiot proof' and are so convenient for morning usage. Has anyone used this pineapple filling with that recipe? I bet it would be tasty.

  16. Ok - I usually love all the reipes that I make off of this site...... but these were just OK. I used 7 of the 8 cups of flour and my mixer just coudn't do it. The dough was very firm. The end result was rolls that were too firm - even more so once cooled. Maybe too much flour?? Don't think I would make again. :(

  19. Joanne and Elsie..these rolls don't need to rise after they are made into rolls and can be baked right away. They do some rising while baking. I found them to be light and fluffy, I'm sorry Joanne that they didn't turn out for you.

I believe I used too much flour also., I have a stand mixer, and it would not try to knead, but was just not doing it...I love pineapple, and put some orange zest on mine...I hope they turn out good.....will advise...and I guess next time use less flour...My dough was very heavy...Love all the recipes......

  23. If these taste half as good as they look I am in trouble. Bought the pineapple today.

    Also thanks for the ham chowder recipe. I made it but I think I was suppose to put the seasoning packet in also that came with the potatoes? I didn't so it was a little bland, nothing that a little nutmeg didn't help though!

    I discovered our local co-op carries dehydrated potatoes so I will make it again using the seasoning packet I still have.

  24. I made this recipe today (half a recipe)and they turned out to be DELICIOUS!! Going to share some of them with my friends :) so I don't consume all the calories. The dough turned out fine for me. I just watched how much flour I added at the end.

Hi there, I made these Rolls and they were very easy and delicious....that got me experimenting so I changed them up to be Rasberry/coconut Buns by making my own rasberry f to the batter....delicious.....as well I added coconut on top of the raspberry filling and sprinkled some on top of the glaze....thanks for posting the original recipe!!illing and adding almond flavoring

  26. I made this recipe and they turned out fabulous. Will definitely make these again. Because of what the other writers had posted, I was careful not to add too much flour and I did let the rolls rise before baking (just in case.) They were so good I just had to share them with others. Thanks for a great recipe!

  27. Love the taste of the buns, but found they were very heavy. My dough did rise and I used 6 1/2 c. of flour. Did I use too much flour? What temp. should the milk be? Mine was 120-130 deg. I would like to try one more time and get it right!
