Chicken and Rice Casserole


Left overs are being used up at our house this week. We are eating a little less and adding a few more salads to our meals.

Ingredients:

  • 4 cups cooked rice
  • 2 tbsp butter
  • 1/2 cup each, onion, celery, red pepper, carrots, chopped fine
  • 1 can cream of mushroom soup
  • 1 cup chicken stock
  • 2 cups left over chicken or turkey
Method:
  1. Melt butter. Saute vegetables until crispy tender.
  2. Add soup and stock. Stir to combine and simmer for another 10 minutes.
  3. Stir in cooked rice and meat. Transfer mixture to a lightly greased casserole dish and bake at 350ยบ for 40 minutes. Serves 4.

  5. Kathy, this is perfect. Just made your chicken a la king last night and have leftover chicken, soup, and broth. Since there's just the two of us, I'll cut this recipe in half and problem solved -- leftovers used up. Thanks.

  6. I have cut up leftover turkey in the freezer. This sounds like another great way to use it up. I like the addition of the sauteed vegetables. My mom used to make a rice dish with bits of carrots in it and they added so much flavor.

  7. Made this tonight for supper. Added peas for another color since I didn't have red peppers on hand.

  8. Beker's daughter....you asked about spices. I find that in recipes that have canned soups they don't need any extra salt, but you certainly could add salt and pepper too suit your taste. You could also add some parsley to casseroles like this one. Happy baking!

  10. Great idea. This is a simple design for a casserole. One way I have incorporated more flavor for my rice and noodle dishes is to cook the rice and noodles in spices and chicken stock by itself. Then the already flavored rice and noodles provide more taste to the dish.
