Banana Oatmeal Pancakes

Ever the pancake lover that I am, this recipe in the Chatelaine Holiday Edition 2008, caught my eye. They may take a little longer to prepare than your average pancake, but then - these are not your average flapjack! Here is my version.

Ingredients:

  • 1 cup quick cooking oats
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 2 eggs
  • 1 cup vanilla yogurt
  • 3/4 cup milk
  • 2 tablespoons melted butter
  • 2 ripe bananas, chopped

Method:
  1. Preheat griddle between low and medium heat
  2. In large bowl, combine dry ingredients
  3. In another beat eggs, add yogurt, milk and butter. Stir in finely chopped bananas
  4. Stir wet ingredients into dry, stirring until blended
  5. Drop by extra large spoonfuls onto pre-heated griddle. You don't want to cook these too quick, because they are quite thick. Turn over once you see tiny bubbles forming on top. If they are too dark, turn down the temperature.
This recipe makes 16 pancakes. Left-overs can be frozen and reheated in the toaster.

  7. I love this recipe! I made them for my children this morning. So good. I love that there is not extra sugar added, the ripe bananas add just the right amount of sweetness :) Thanks for sharing! This is going to replace the old flapjack repice for sure!

    I'm not sure where to send this suggestion, but it would be so great if there were more than a couple recipes on the first page (it can be changed in the settings), to allow a leisurely scroll through the most recent recipes. I have MGCC on my bloglines, but my husband LOVES scrolling through and finding recipes here, so it's for him too! :)

  15. I prepare a banana pancakes batter using flour and yogurt without adding oatmeal, I cook pancakes for my husband, and from the same recipe I do waffles for me.
    I like the addition of oatmeal for crunchy texture..I like to try it next time.

  18. I made a double batch of these today. Pancakes make so many dishes to wash so I always double and freeze to have 'freebies' later. :)
    These are great. I did make a few substitutes.
    plain yogurt + 2T rapadura (unrefined sugar) in place of the vanilla yogurt.
    I only had rolled oats, so I mixed them with the milk and yogurt and let it sit 5 minutes before I started the recipe to let them soften.
    I added some cinnamon (cause I really like cinnamon)
    Everyone, including my 'I don't like pancakes' child, loved them!

  28. Annonymous, It usually takes a need in our fmaily to have to cook a certain way. I can suggest almond milk or rice milk for dairy allergies. Some with dairy allergies can even handle yogurt.... but I have no suggestions about the eggs. If someone has any ideas, feel free to share.
