Biscuits Supreme





I challenge anyone out there that loves biscuits to try this recipe. I haven't found one that I like better than this gem. It is from the Mennonite Treasury, and this page is torn, splattered and looks very well used. This recipe is the base for so many other recipes, like quick Cinnamon buns or pizza rolls, cheese and garlic buns etc. Try this flaky, buttery, oh so good biscuit, you won't be sorry.
  • 2 c. sifted flour
  • 4 tsp. baking powder
  • 1/4 tsp. cream of tartar (it works without it too)
  • 1/2 tsp. salt
  • 2 tsp. sugar
  • 1/2 c. butter
  • 2/3 c. milk
  1. Sift together dry ingredients, cut in butter until mixture resembles coarse oatmeal. Add milk all at once and stir with fork only until blended. 
  2. Knead ten time in a lightly floured board. 
  3. Roll or pat out dough to 1/2 " thickness. 
  4. Cut with floured biscuit cutter and place on lightly buttered baking sheet at 450 for 10-12 minutes. 
It needs no extra butter, so good Mmmm!

  10. Biscuits have been a staple at our house. My recipe is similar but I will certainly try this one. Biscuits fill in for buns with things like Chicken a la King etc. and my grandkids love them when rolled up with cinnamon and sugar sliced and baked. I also vary the flavour when serving them with soups - my favourite is adding basil and grated cheddar to the flour before adding the liquid.

  16. My husband talks of the schnetke his mother used to make, so I tried this recipe..... well, we ate them, but I was also gently reminded they didnt quite look like "my mom's".... I checked the recipe again, and then I realized WHY!! I saw "4" and absentmindedly put in 4 cups of FLOUR!! not 2! So, back to the kitchen I go!!

  17. Well I don't know what I would do without you ladies anymore. I made these biscuits to go with the Meatball Vegetable Barley Soup for dinner. I haven't tried a recipe so far that I haven't liked... make that my whole family hasn't liked!

  18. I have used several biscuit recipes out of the Mennonite Treasury cookbook but never this one. I made these tonight for supper and they were fabulous. I ended up adding a few tablespoons of water because my dough seemed a bit dry, but they turned out so tender and flaky. I am always delighted with the recipes from this site. I visit here every day to see what other delicious things I can make. Thank you so much!

  20. Okay... I just ate the first biscuit (my husband is currently finishing off the rest on the pan) and they are amazing!! So soft and flaky (even though they still didnt rise). I will for sure use this recipe again! Thank you!

  21. Did they rise while baking? The trick with biscuits is not to knead them hard ... just stir and shape until it's good enogh to roll out. I was also going to suggest you check the expiration date on your baking powder, but it sounds like you got it.

  23. First batch is in the oven! I have to say this receipe makes the most wonderful dough to work with. Not tough or sticky...... pure perfect. Now my challenge is to keep these little gems safe from my kids and husband until dinner is ready

  24. Hi, i was wondering if these biscuits could be made gluten free. Maybe with quinoa flour or brown rice flour..has anyone tried different flours??

    1. I'm sorry I can't answer your question regarding making the biscuits GF, since I have never tried. If you experiment with a gluten-free version, let us know how it works out!

    2. re - biscuits gluten-free ... You could make this recipe substituting a flour mix -- most grocery stores carry a gf biscuit mix. You may have to adjust the amount of flour though -- a little less (I would try 1 1/2 - 1 3/4 cup)

  29. I just made them for dinner also. Having beef stew. 20 min before dinnertime started them. Fresh right out of the oven. Just wonderful. P.S. I'm a dad with 2 kids under 3. Love the recipe!
