Taco Soup

My family loves this soup..it will warm you on a cold day! Got this recipe from a friend although I changed it a bit.

Taco Soup

1 lb lean ground beef
1 finely chopped onion..that's what the recipe says..I omitted that because we happen not to like onions:)
1 cup finely chopped celery
Fry this together until beef is browned and onion and celery are cooked.
Add:
1 398 ml (14 oz)can tomato sauce
1 341 ml (12 0z) can corn, with liquid
1 398 ml can kidney beans, drained
1/3 cup salsa
1 tbsp chili powder..I use Mexican chili powder
3 tbsp taco seasoning
3 cups water
Simmer for 10 to 15 min.
This soup is fairly thick so add a little more water if you wish. Recipe can easily be doubled or tripled..I didn't but should have:)
Add taco chips, shredded cheese and sour cream to your individual soup bowls.

  2. This sounds very good Betty. Love the heartiness of it and the taco seasoning sets it off just right I bet. Never tried this but think I should when the son comes home this weekend! Yum....great idea for a soup.

  4. I'm smiling .. .it must be mexican week here. The visit to Taco Lobo last Friday must have had it's effect.

    The soup looks really good. Now. .I'm curious. ..no onions? None of you? Thy are so good for you.. . .smile. I'm remembering Julies post where he said Vic eats onions to keep healthy.

  7. I just love taco soup, and the kids like it better than when i make chili.
    your version is slightly different than mine, tomato sauce is better for you than tomato soup anyway.

  10. This morning I was thinking I need a few more quick after work meals. We often have comapany over after work for supper. I get most of the meal ready in the morning, set the table and then we both pitch in when we get home. This will be my next quick fix meal...and we love mexican...and onions:) Kathy

  12. I don't like onions either, but have you tried using onion soup mix or onion puree?? If there are no chunks of onions (or tomatoes!) I will eat it. For any recipe that calls for onions, I now puree them & it's great! Just an idea. That soup looks wonderful! I may have to make it in a couple of weeks when I have an apartment full of ppl!

  20. Yvonne..I bought mexican chili powder at Costco, I'm not sure who else carries it. The regular chili powder would be fine, the only difference I think is that the mexican one is a bit more spicey.

  24. SO good! I switched the Kidney Beans for Black beans. & added a can of diced tomatoes (we really love tomatoes).

    1. Happy you liked the soup, Kara. The switch to black beans is a good choice! That's what I love about soups, you can add the extras that you like and it's always good.

  25. I made it this week with my after school cooking class. The students and I loved it. I also substituted the kidney beans with black. Some teaching staff who stayed later to work got to sample as well. I'll likely make this as one of our upcoming Friday hot lunches. Tasty tip: use Frito corn chips.
