My family loves this soup..it will warm you on a cold day. Received this recipe from a friend although I changed it a bit.
- 1 lb lean ground beef
- 1 medium onion, finely chopped. I omitted the onions because we happen not to like onions:)
- 1 cup celery, finely chopped
- Fry beef, onion, and celery together until beef is browned and onion and celery are cooked.
- Add:
- 1 398 ml (14 oz) can tomato sauce
- 1 341 ml (12 oz) canned corn, with liquid
- 1 398 ml can of kidney beans, drained
- 1/3 cup salsa
- 1 tablespoon chili powder..I use Mexican chili powder when I can find it in the store
- 3 tablespoons taco seasoning
- 3 cups water
- Simmer for 10 to 15 minutes.
- This soup is fairly thick so add a little more water if you desire. Recipe can easily be doubled or tripled..I didn't but should have:)
- Add taco chips, shredded cheese and sour cream to your individual soup bowls.
Another great gluten free recipe! Winter is coming!!
ReplyDeleteThis sounds very good Betty. Love the heartiness of it and the taco seasoning sets it off just right I bet. Never tried this but think I should when the son comes home this weekend! Yum....great idea for a soup.
ReplyDeleteGreat recipe. We are having taco soup tomorrow. It must be that time of the year to start pulling out soup recipes.

I'm smiling .. .it must be mexican week here. The visit to Taco Lobo last Friday must have had it's effect.
ReplyDeleteThe soup looks really good. Now. .I'm curious. ..no onions? None of you? Thy are so good for you.. . .smile. I'm remembering Julies post where he said Vic eats onions to keep healthy.
Betty, if I hadn't already made dinner plans for tonight we would defifinitely be having this. Oh my gosh, this has so much appeal to me. Perhaps this weekend. Looks slurp-ilicious!!!
ReplyDeleteOh, this looks absolutely delicious! Lovely photo...makes you want to try it VERY soon:)!Thanks for sharing.
ReplyDeleteI just love taco soup, and the kids like it better than when i make chili.
ReplyDeleteyour version is slightly different than mine, tomato sauce is better for you than tomato soup anyway.
yum!
this is one of my favorite recipes...so easy and yummy! we add avocado chunks to the top of our soup as well :)
ReplyDeleteI love anything with beans! Beautiful picture!
ReplyDeleteThis morning I was thinking I need a few more quick after work meals. We often have comapany over after work for supper. I get most of the meal ready in the morning, set the table and then we both pitch in when we get home. This will be my next quick fix meal...and we love mexican...and onions:) Kathy
ReplyDeleteI love this soup, going to make it today and serve it with my homemade bread! Come say hi :D
ReplyDeleteI don't like onions either, but have you tried using onion soup mix or onion puree?? If there are no chunks of onions (or tomatoes!) I will eat it. For any recipe that calls for onions, I now puree them & it's great! Just an idea. That soup looks wonderful! I may have to make it in a couple of weeks when I have an apartment full of ppl!
ReplyDeleteOle! And you eat it with Doritos?? Does it get any better than that??? Looks great and perfect for the upcoming colder weather ~ ♥
ReplyDeleteThis looks perfect for the weather we're having this week, Betty! I do a chicken taco soup in the slow cooker...that just may be on the menu in the next day or two. ;) Thanks!
ReplyDeleteThis looks wonderful! I'm wondering though if you drain the corn and beans, or just add all the juice from those cans? Thanks!
ReplyDeleteMenno Jeweler..thanks for pointing that out..I don't drain the corn but I do drain the kidney beans.
ReplyDeleteJust wanted to let you know that I made this yesterday and my family absolutley loved it! Thanks for sharing!

That sounds delicious! Especially on a cool fall night! I'm definitely going to try this! :).
ReplyDeleteWhere do you find Mexican chili powder?
ReplyDeleteYvonne..I bought mexican chili powder at Costco, I'm not sure who else carries it. The regular chili powder would be fine, the only difference I think is that the mexican one is a bit more spicey.
ReplyDeleteOh my this looks good!
ReplyDeleteI made this myself 2 weeks ago, very very good, I doubled the spices though.. I like things well seasoned..
ReplyDeleteLove this site!
Made this on Sunday night, and it is FABULOUS! This will be a long-time family favorite!
ReplyDeleteI've made this soup multiple times for company, for giving away and for my own family. It is delicious! Thanks for sharing this recipe! :)
ReplyDeleteSO good! I switched the Kidney Beans for Black beans. & added a can of diced tomatoes (we really love tomatoes).
ReplyDeleteHappy you liked the soup, Kara. The switch to black beans is a good choice! That's what I love about soups, you can add the extras that you like and it's always good.
DeleteI made it this week with my after school cooking class. The students and I loved it. I also substituted the kidney beans with black. Some teaching staff who stayed later to work got to sample as well. I'll likely make this as one of our upcoming Friday hot lunches. Tasty tip: use Frito corn chips.
ReplyDeleteI need to make 150 bowls of this soup. How many bowls this this recipe make> Thanks Rosa Toews
ReplyDeleteThis recipe makes approx 8 to 10 bowls.
