Sparkly Ginger Cookies

This is a recipe from my daughter and it is a favorite in our family. I have baked these many times and I should add that they rarely make it to the freezer. I have made these for bake sales and they are grabbed up very quickly.

3/4 cup butter or margarine
1 cup white sugar
1/4 cup molasses
1 egg
2 1/4 cups flour
2 tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/4 tsp salt

Preheat oven to 350.
Cream together the butter, sugar, molasses and egg. In separate bowl mix together the dry ingredients and add to the creamed mixture.
Roll the dough into small balls, approx 1.5" in diameter. Roll balls in white sugar, place on baking pan.
Bake for 10 min. Let cool slightly and transfer cookies to cooling rack.

  2. I always make those at Christmas. They are so good and they always turn out perfect. Judy just reminded me that Christmas is around the corner.

  3. I just want to say I have been following your blog for a while now and I am enjoying it so much, the recipes are all fantastic and I have used a few, I will do this one for sure we are a fan of ginger and molasses in this house.

Betty these are the best cookies, I have the same recipe, I call them "Swedish Cookies" because my sister-in-law went to Bible school in Sweden and she brought this recipe back with her and she told us that these cookies where made once a week at the school. Great for camping, they last a long time in an air tight container.

  8. I also enjoy this cookie.I bake it anytime and there are never enough to put in the freezer. When my hubby finds them..he seems to be constantly snacking..next time I look...container is empty...great cookie.

  10. I can't wait to try this recipe, my kids love the over-sized ginger cookies that you can get from some coffee-shops, so I'm sure these will be a favorite! Do you happen to have a recipe for pumpkin seed cookies, there's much more in them then that, but I can't remember what! They just seem so full of autumn flavours! Thank you for this great blog, what a blessing it has been in my kitchen!

  12. I just made this cookie using the same recipe. I did manage to put a container in the freezer. A perfect cookie to have with afternoon coffee or tea. Kathy

  13. I love ginger cookies... and I'm always looking for even better recipes! I like to roll mine in coarse coloured sugar (but I only roll the tops otherwise they burn too quickly on the bottom. I love red and green for Christmas! :)

  14. Thank you so much for this recipe. It's been a family favourite for many years, and this year I realized I gave away my old Mennonite cookbook without transcribing this recipe! My daughter has been anxiously awaiting the arrival of these cookies, and would have been very disappointed if they hadn't shown up. Thank you for saving a small part of our Christmas tradition!-Linda

  15. Fixed these today and found that the dough is much easier to shape into balls if it is refrigerated. They tasted very good and were very soft.
