For flashback Friday I'm bringing back these maple toast eggs, they are a nice change for breakfast, it's a one egg breakfast in a muffin cup.
- 6 bacon strips, diced, I used maple flavored bacon
- 1/4 cup maple syrup
- 1/8 cup butter
- 6 slices firm textured white bread, I used multigrain
- 6 eggs
- Salt and pepper to taste
- In skillet cook bacon till crisp, place on paper towels to absorb grease, then dice and set aside.
- In small saucepan heat syrup and butter until butter is melted.
- Trim crusts from bread, flatten slices with a rolling pin.
- Brush one side generously with syrup mixture and press each slice into a lightly greased muffin cup with syrup side down.
- Divide diced bacon among muffin cups.
- Carefully break one egg into each cup.
- Sprinkle with salt and pepper.
- Cover with foil.
- Bake in a 400ยบ oven for 18 to 20 minutes or until the eggs are done. I baked them for 22 minutes.
- Serve immediately, I had a little syrup mixture leftover so I drizzled it over the eggs.

ReplyDeleteWow, I've never heard of this and it looks great. What a great idea when having company for breakfast. I'm no short order cook in the morning and making this many tastely eggs at once would be a much better option. Thanks for sharing :)

ReplyDeleteAnother variation of this is made by using two slices of multi-grain bread. Use a biscuit cutter to cut a round hole in one slice. Lay it atop the other whole slice on an oven tray, not in a muffin tin. (Butter the top side of the cut slice and the underside of the whole slice.) Pour a raw egg into the "nest." I put this into a toaster oven set on 300 degrees, using foil for awhile to prevent burning of the upper bread.
The flavor of real butter on oven-toasted bread is amazing. The yummy egg is icing on the cake.

I made mine really simple because its all I had I put scrabbled egg and the bread in the cups, but next time I will add ham or bacon, with the syrup.. I just have to say Im so in love with all the recipes here because they are ingredients I have in my home they are fast and simple and they are home cooking.. Im new to this page but i have gone through the whole blog and printed off all the recipes Im going to try, thanks so much!!
