Baked Potato Sticks

These potato sticks were quite delicious dipped in sriracha mayonnaise, this spicy mayo will wake up your taste buds. Ketchup for dipping is always a good choice too.
  • 2 large white baking potatoes
  • 2 egg whites
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons Parmesan cheese, grated
  1. Wash and scrub potatoes.
  2. Cut potatoes lengthwise in 1/4" sticks. I used my handy dandy mandolin for this.
  3. Soak potato sticks in cold water for 30 minutes.
  4. Drain and pat potatoes as dry as possible using paper towels or tea towels.
  5. In a large bowl whisk egg whites, salt, pepper, garlic powder, and grated Parmesan cheese just until combined.
  6. Add potatoes and toss to coat.
  7. Place in single layer in a large baking pan coated with nonstick cooking spray.
  8. Bake uncovered in a 400ยบ oven for 25 minutes or until tender and golden brown in color. Turn potatoes halfway through baking.
  9. Yield: 4 servings. Great served with burgers, hot dogs, fish or steak.

  2. I will be making them this week. By the way, I always soak my potatoes - usually overnight - because it removes the potassium in the potato and if you are having problems with your kidneys, potassium is your enemy.

  4. I love that grandpa says "sriracha" different every time :) These look so good and I am a bit disappointed that you know how much I love potatoes and didn't invite me over for the feasting. I guess I still love you :) <3 - Kayla
