These potato sticks were quite delicious dipped in sriracha mayonnaise, this spicy mayo will wake up your taste buds. Ketchup for dipping is always a good choice too.
- 2 large white baking potatoes
- 2 egg whites
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 2 tablespoons Parmesan cheese, grated
- Wash and scrub potatoes.
- Cut potatoes lengthwise in 1/4" sticks. I used my handy dandy mandolin for this.
- Soak potato sticks in cold water for 30 minutes.
- Drain and pat potatoes as dry as possible using paper towels or tea towels.
- In a large bowl whisk egg whites, salt, pepper, garlic powder, and grated Parmesan cheese just until combined.
- Add potatoes and toss to coat.
- Place in single layer in a large baking pan coated with nonstick cooking spray.
- Bake uncovered in a 400ยบ oven for 25 minutes or until tender and golden brown in color. Turn potatoes halfway through baking.
- Yield: 4 servings. Great served with burgers, hot dogs, fish or steak.

ReplyDeleteI will be making them this week. By the way, I always soak my potatoes - usually overnight - because it removes the potassium in the potato and if you are having problems with your kidneys, potassium is your enemy.
