Pineapple Chicken Rice - Gluten Free


This is one of my favourite comfort foods.
While my husband will still ask "What's for dessert?" , I need no dessert with this meal.

Before I give you  the recipe I'd like to share how I cook my rice -  I love it...  no mess, no fuss, perfect rice every time.   I like Uncle Ben's Brown rice , or converted rice .. my favourite is sprouted brown rice which is the most nutritious.

  • 1 cup rice 
  • 3 cups water 
  • 1/2 teaspoon salt 
  • 1 tsp butter 
  • 1 tsp lemon juice
  1. Put all ingredients into a microwave proof bowl or baking dish (with lid - can use plate)
  2. Place in microwave and set cook time for 25 minutes..  (microwaves vary so you might have to adjust for your microwave or the type of rice you prefer) 
Pineapple Chicken Rice 
  • 2 or 3 chicken breasts
  • 1 tin pineapple tidbits 
  • 1/3 cup brown sugar 
  • 1/2 tsp nutmeg 
  • 1 tsp thyme 
  • 1 tbsp soya sauce (make sure its gluten free)  
  • 1/2 onion 
  • 2 tbsp butter 
  • 1 tbsp oil 
  • 1/2 tsp salt 
  • dash of pepper 
  • 3 tbsp cornstarch 
  • pineapple juice 
  1. Season chicken breast and cook as desired -  I like to do them in the pressure cooker - it takes 20 minutes and they are melt in your mouth tender. 
  2. Put finely chopped onion and butter/oil into sauce pan and cook until onion is tender.  
  3. Mix sugar, nutmeg, thyme, salt, pepper and cornstarch. 
  4. Drain pineapple tidbits, saving juice - add more pineapple juice  to make 2 cups 
  5. Add soya sauce
  6. Stir juice/soya sauce into dry ingredients and mix until smooth 
  7. Add to onions and cook , stirring until smooth and thickened. 
  8. Add pineapple tidbits 
  9. Add chicken cut up into bite size pieces. 
  10. Cook a minute or two to make sure it is all heated through.
  11. Serve over rice..... Enjoy ! 
NOTE -  sugars and spices can be adjusted to personal taste.

  1. Yum! I'll be making this soon..probably next week when company arrives. Dishes like that are so nice because you can stretch them a bit and it's budget friendly which I need. Plus, I'm sure the youngsters will love it too. Thank you!

  2. Just checking on the amount of water in the rice. When cooking rice on the stove you add twice as much water to rice. Is it really 3x as much when cooking in the microwave?

    1. I've done my rice this way for years - in the microwave in ratio of 3 parts water for 1 part rice ... Its perfect every time - water all absorbed. I know I used to do the double water on the stove as well - I really don't know WHY it would be different in the microwave but I've learned to 'not mess with what works' ! smile

    2. Ok... update ... I asked my husband about why microwave needs more water .. and he said (short version) that it has to do with ionization -- the way the water is heated, and the rapid steam more quickly released and lifted out by the fan.

  3. I was wondering the amount of water also. I cook mine on the stove in a large pot so it won't boil over with 2 cups of water to a cup of rice. I bring my water to a boil and dump my rinsed rice in it and bring it to a boil and turn it on low for 20 minutes and i get a perfect rice every time. I guess there's more than one way to cook rice.

  4. I don't have pressure cooker - any suggestion on to prepare chicken?

    1. Bake it in the oven - baking dish, a little water, covered with lid or tin foil -- about an hour.
      Or cut in pieces and pan fry in a little oil -- or grilled ... really whatever way you like to prepare your chicken breasts would be fine.

    2. I am just finishing making this recipe, and what I fried my chicken in a little olive oil, added the onion when it was almost done, and then added the rest of the sauce ingredients. One dish. ;-) But you could bake, broil, boil, or BBQ it too.

  6. Do you leave your microwave on high to cook your rice or adjust the power setting? I have a rice button (very handy) on my microwave & although it cooks basmati & jasmine rice perfectly, regular rice, converted, etc. at a ration of 1 cup rice to 2 cups water always turns out wet and mushy which leaves me also wondering at your ratio of 3 cups water to 1 cup rice. Thank you.

    1. Yes... I leave my microwave on high... It always ends up juuuuuust right ! :-) fluffy and never wet and mushy. you can see the rice in the photo -- it was done exactly as I described.

  7. I am going to make this as it has no Tomatoes
    I seem to have become allergy to Fresh and Canned even Sundiried Tomatoies ?
    Are there more Casseroles on your web page that do not have tomatoies or what can I instead of Tomatoes

    1. look up above in their Recipe Index under Casseroles and you will find many recipes with no tomatoes. You have to open up the recipe to look at the ingredients, but there are many good recipes for you.

  8. I'd love a little more detail on how you do your chicken in a pressure cooker - my husband keeps pointing out that I have one and don't use it much...

Hi Gwen, when I just want chicken breasts for a recipe like this one, I simply season the breasts lightly with salt, and place them in the 'basket' that came with my pressure cooker - or you can put them in a dish on top of the wire rack to lift them higher than the water line. I process them on the high setting for 20 minutes. They are tender soft.

    1. Hi Margaret .. my pressure cooker is a Fagor and I like it ... Its the only one I have ever used so I'm not sure how it compares to others, but it has not caused me any problems.
