Lemon Anise Grilled Chicken

Anise seed is one of my favourite seasonings for chicken.
In our home it's mandatory in homemade Chicken noodle soup and
roast chicken is just not the same without it.
I had taken a few chicken thighs out for supper the other day and decided to add lemon
to the anise seed for a new flavour twist on the barbecue.
  • 4 chicken thighs, bone in
  • 1 clove garlic, minced
  • 3 tablespoons olive oil
  • 1 tablespoon lemon zest
  • 1 teaspoon lemon juice
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon flavoured pepper (like Montreal steak spice)
  • 1 teaspoon anise seed
  1. Wash chicken thighs and blot dry with paper towel.
  2. Mix remaining ingredients.
  3. Brush on all sides of chicken.
  4. Place over medium heat on barbecue.  Grill until meat is cooked through.

  2. I have star anise, and ground anise. Is there something in between those two, or could I use ground? ~Colleen

    1. The ground anise might work if you sprinkle sparingly it on the chicken. although ideally anise seed is best. I also make Licorice snaps with anise seed so the bottle doesn't stay full for long. (see index under cookies and bars, refrigerator cookies)

    2. Anise seed and Star anise are actually two different spices. if you have ground anise, it might be ground Star Anise. Both have a mild licorice flavour but Anise seed is less bitter and a bit sweeter than the big Star Aniseed that we recognize as a rusty brown star with eight tips and each tip contains a shiny amber seed. Anise seeds are small oval brown seeds ... almost like a caraway seed shape.

Bev's recipes is calling for the Anise seeds.

    3. Thank you! I don't remember seeing that at my local big grocery chain, but if not there then at a spice shop. ~Colleen

    1. Cooking time will depend on your grill and the weight of your chicken pieces. I'm thinking these bone in pieces would have taken about 1/2 hour. Boneless will take less time.
