Christmas Cranberry Coconut Loaf



This loaf keeps really well for several day and is perfect loaf to serve with a cup of tea...
or to serve along side Mandarin oranges on Christmas morning gift opening.
Bake it ahead, wrap it tightly in plastic wrap  and refrigerate for several days.
The fresh cranberries add a touch of tart to this moist loaf.

  • 1 1/2 cup flour
  • 1/2 cup oatmeal
  • 1/2 cup shredded coconut
  • 3/4 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup fresh orange juice ( about 1 large naval orange)
  • 1 teaspoon orange rind
  • 2/3 cup plain greek yogurt
  • 1 cup  fresh or frozen cranberries (cut in half)
  • 1/2 cup dried cranberries
  1. Preheat oven to 350 F. Spray a 8 X 4 inch loaf pan with cooking spray.
  2. In a large bowl, combine dry ingredients.  Make a well in the center.
  3. Combine the wet ingredients in another bowl.
  4. Stir wet ingredients into dry ingredients and add cranberries. Stir until combined.
  5. Scrape into loaf pan and bake for 45 minutes or until a toothpick comes out clean.
  6. Cool on wire rack.

  3. Lovella, this recipe looks wonderful! I'm wondering if, since my family dislikes coconut, could I substitute 1/2 C. of another dry ingredient such as chopped walnuts?

    2. You are right.. the full fat yogurt replaces any oil.

  5. I'm all set to bake this & I too noticed that there is no oil or butter. I was going to do a double batch to make two loaves but am afraid that possibly it might be a mistake so I think I will have to wait & see if we get a response on this. Would hate for it not to turn out.

  7. This cranberry studded loaf sure says Merry Christmas to me. I will be baking a few loaves this week to add to my gift baskets. I would love to make them in my Wilton mini bunt pan, but I don't know how much to decrease the baking time. The pan has 6 molds that look like they hold about 1 & 1/2 cups of batter. Does anyone know how much to adjust the baking time for mini mini bunts? Thank you for another great looking recipe.
