These cookies are soft and chewy with a hint of lemon and a bit of crunch from the coarse sugar which they are rolled in. I also like the 'crackly effect' on top. They are a nice addition on a cookie plate at Christmas or you can bag them up for gift giving.
- 1 cup butter, softened
- 1 1/2 cups sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/2 teaspoons lemon juice
- Zest of a lemon
- 2 3/4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- Coarse sugar for rolling cookies
- Beat butter and sugar until smooth and fluffy.
- Add egg, vanilla, lemon juice and lemon zest and mix well.
- Stir together flour, baking soda, baking powder, and salt in a small bowl.
- Add gradually to the creamed mixture until well blended.
- Form rounded teaspoons of dough into balls and roll in coarse or regular sugar.
- Place on parchment lined cookie sheets.
- Bake in a 350ยบ oven for 8 to 10 minutes, just until lightly browned on the bottom, that is if you want them soft and chewy. I baked some a bit longer until they were lightly browned on top but then it resulted in a crispy cookie, still good but I wanted chewy.
- Once out of the oven allow to cool slightly on the pan before removing them to a cooling rack.
- Yield: 3 to 4 doz depending on size.

ReplyDeleteI love sugar cookies. These look so good. I can't wait to start my Christmas baking. But one year we started too soon and we had eaten them all before Christmas and I had to bake twice. So not doing that again. Wondering what are the lovely looking cookies besides your blog title. They are chocolate ones with cherry is it and two kinds of chocolate drizzled on top. of all the cookies I've made, sugar cookies are still one of our most favorites here and probably the ones I make with the most frequency. LOVE the little bit of lemon in these. A special cookie, I know!!

ReplyDeleteI made these cookies last week and forgot to put them in the freezer! The next morning the cookies sort of looked droopy because I put them in a round container and they sagged. I quickly threw them in the freezer and took them to a potluck on Sunday. I took out the frozen cookies and placed them on a platter. I was WRONG--they only looked droopy and saggy. They weren't! They looked and tasted wonderful. I'm nibbling the last one right now as I type. The only thing difficult was finding coarse sugar! It cost me $5 for a divided container with 4 different colors! Where do you find this stuff? Yummy!

I baked these cookies for a picnic at Spanish Banks/Vancouver tonight. They are the best sugar cookies ever - really, you should repost this recipe!!
ReplyDeleteChewy/soft inside with crisp edges and a bit of sugary crunch all around. Not the kind you'd want to roll out and cut out shapes with, more of a roll into balls and flatten before baking type.
