Breakfast Egg McMuffin

 Good morning. How about and Egg McMuffin!
A pepper ring makes a perfect form to cook eggs in. I chose to add back bacon and use provolone cheese. Change it up using different coloured pepper rings, ham or bacon and your favourite cheese.

Ingredients: (for 2)
  • 2 English muffins
  • 2 rings pepper, any colour
  • 2 tbsp butter
  • 2 eggs
  • 2 rounds of back bacon, or 2 slices of ham or regular bacon
  • 2 slices provolone cheese, or your favourite cheese
Method:
  1. Melt butter on grill. Place pepper ring on heated grill and allow to sit in hot butter for a minute.
  2. Add bacon or ham to the grill to heat through. Remove when done and hold in a warm oven.
  3. Crack eggs into the centre of the pepper rings and cook until done to your likely. You can flip over if you like.
  4. Toast English muffins while eggs are cooking.
  5. Top eggs with cheese about half way through cooking so the cheese has a chance to melt. 
  6. Once cheese is melted and eggs are done to your liking, top with meat.
  7. Top toasted English muffins with eggs. Serve immediately.

    1. An English muffin is a flat airy and light biscuit that commercially comes as a stack in a long thin bag. They are pre split and wonderful toasted with butter and honey, peanut butter or jam. Try them with a slice of cheese and toast under the broiler. Betty has a recipe for English Muffins here on the blog. I hope that helps you out.

  5. How fun...just last week I started cooking eggs in an onion ring. Hadn't thought about using a bell pepper! I am thinking now of the sauté breaded onion slice with the pepper slice inside, a tomato slice in the bottom inside, a slice of bacon (soft cooked) cheese and finally the egg. Gorgeous full meal!
