These S'mores are rich in flavor and oh so good. Of course if we would go camping I would want to do 'over the fire' style of s'mores.
Ingredients:
- 1/2 cup butter, softened
- 3/4 cups brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup graham wafer crumbs
- 1 cup flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1 cup marshmallow fluff (sometimes called marshmallow creme)
- 1 cup chocolate chips (I used a blend of milk and dark)
- Line an 8" x 8" pan with foil leaving a slight overhang. Spray foil with cooking spray. Set aside.
- Beat butter and sugar until light, beat in egg, and vanilla until well combined.
- Whisk together cracker crumbs, flour, baking powder, and salt.
- Turn mixer to low, add dry ingredients to the moist ingredients mixing until well combined, as for a cookie dough.
- Press half of the mixture evenly into foil lined pan.
- Spoon marshmallow fluff on cookie base and gently spread it out, spreading it is easier if you dip the spoon in hot water.
- Sprinkle chocolate chips over the marshmallow.
- Scatter remaining cookie base over the top in clumps.
- Bake in a 350º oven for 30 minutes, until golden brown.
- Cool completely, then remove from pan using the foil overhangs to lift it out.
- Cut in bars and serve.
Are these graham cracker crumbs listed as the first ingredient?

ReplyDeleteI made these over the weekend. I put a little more fluff than the recipe called for, the fluff rose between the dollops of graham topping and browned a nice golden color. The browned fluff added that campfire toasted taste that can't be beat.

ReplyDeleteI made these tonight with 3 pre-teens. Easy and fun recipe, and absolutely delish! I pulsed the graham crackers in the food processor to make a flour, then added flour, baking powder, salt - pulsed to mix. Then added that to the liquids as stated.

ReplyDeleteI tried it with mini marshmallows - about enough to loosely cover the "crust" (maybe a cup/cup and a half). It seemed a bit dry, so maybe actual marshmallows dry out too quickly?
ReplyDeleteI made these today, are they are ooey-gooey good! One thing tho, don't make these unless you have 10 people to help you eat them. Or you need lots of self-control!
