Sweet Potato Biscuits


With a hint of sweetness and bits of sweet potato flavor it is a perfect biscuit to serve up with chili or soup. These biscuits are also wonderful slathered with honey butter.

Ingredients:
  • 1 3/4 cups flour
  • 2 level tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup butter, chilled and cut into cubes
  • 1 cup sweet potato, cooked and mashed with fork
  • 1/3 cup buttermilk
Method:
  1. Combine dry ingredients in a medium sized bowl.
  2. Using a pastry blender cut in butter until pea size pieces.
  3. Combine mashed sweet potato and buttermilk. Add to flour mixture stirring just until combined. It will still be crumbly at this point.
  4. Turn mixture out on counter and knead lightly just until it all comes together in a ball.
  5. Pat out dough to desired thickness, approximately 3/4" thick.
  6. Cut into biscuits, I used a 3" round cookie cutter.
  7. Place biscuits on a parchment lined cookie sheet.
  8. Bake in a 400ยบ oven for 15 minutes. Best served warm.
  9. Yield: 10 biscuits

  2. I have made a similar biscuit, but with yeast. Also added coriander as a bit of spice. We used these as breakfast biscuits with a slice of ham in the middle!
