Buttermilk Pancake Mix


This is an idea for that "ten dollar gift for the gift game" or perfect to bring along if you will be an overnight guest during Christmas holidays.
I found these Batter Dispensers at our local Hom*Sens* store.
At under ten dollars, it gave me a bit of wiggle room to become a bit creative.
I mixed up some of my homemade buttermilk pancake mix,
put enough for two breakfasts in a Ziploc bag and included the recipe.



Buttermilk Pancake Mix
  • 8 cups of flour (use part whole wheat if you like)
  • 1/2 cup white sugar
  • 5 teaspoons Baking Soda
  • 8 teaspoons Baking Powder
  • 2 teaspoons Salt
  • 1 cup of Dry Buttermilk Powder (readily available online if you can't find it in Canada)
  1. Mix all together and store in a sealed bag or container in a cool place.
Buttermilk Pancakes
  • 1 1/2 cup dry Buttermilk Pancake Mix
  • 1 egg
  • 2 tablespoons oil (I am currently using grapeseed oil which is wonderful)
  • 1 cup of water
  1. Measure the dry Buttermilk Pancake Mix into a 4 cup measuring cup with a spout.
  2. Add the egg, oil and about 3/4 cup of water. Add enough water to make the right consistency.
  3. Pour into your batter dispenser and create your pancake masterpieces in a greased skillet over medium heat.

  4. I have been making this recipe for years. My recipe is 4x this size though. Love it. Also works well to make waffles with this batter. Done it countless times.

  6. Quinn...a batter dispenser is essentially a container with a squeeze tube. YOu can draw with it. You could use a clean washed out ketchup container.

    I found my dry buttermilk powder at Fred Meyer.

  8. I bought the buttermilk powder in the States for my daughter (when she lived there) because it was difficult to get the real stuff. And you know me and how I like buttermilk in pancakes and muffins. It's a staple in my fridge. I hope to see those pancakes on my plate tomorrow morning. I have a very good chance. =) Love the gifting idea!

  10. I am not a fan of powdered milks, even buttermilk so this is what I would do. Don't use buttermilk powder in the mix recipe and when you make the pancakes use buttermilk instead of water. Easy and I can stay home and make butter to have the buttermilk instead of going to the dupermarket.

  11. Are we allowed to share our favorites with you? I'll risk it!

    Whole Wheat Pancakes
    2 cups whole wheat flour
    2 Tbsp molasses
    1 tsp salt
    1 1/2 -2 cups milk (thickness you prefer for batter)
    3 tsp baking powder
    2 eggs
    5 tbsp. oil
    Mix dry ingredients together. Beat eggs well, then add milk,oil and eggs to dry ingredients. Mix well. Leftovers can be fridged and toasted next day! You can also add a quarter cup of ground flax seed for extra fiber to the batter if you like.

    I too have recently been using grape seed oil for my cooking and am very pleased with the results.

  15. if you can't find buttermilk powder - you can use regular powder milk - and then when you add the water just add 1Tbsp of vinegar - it does the same thing.

  16. My family likes to have pancakes every Saturday morning for breakfast.
    I had been using a master mix from the More WIth Less Cookbook...and while it was ok, these pancakes were fantastic! They got nice and fluffy and had a very pleasant flavor. I will now be using this one...and giving some as gifts as well!
    I found the buttermilk powder at a local store that sells bulk foods.

  19. Lovella - your pancakes look so evenly and lightly browned. Mine always get too dark so my question is how do you keep them so light - what do you cook them on? (I use a frying pan) It seems mine are not done on the inside unless they are dark on the outside but I love how yours look! Yummy!

  20. I make my pancakes on a good quality non stick fry pan. Then. ..I cook mine over medium heat. If yours are too dark and not done on the inside your heat is too hot. Try turning down your heat.
