Tomato Soup Cake

Not long ago one of my co workers arrived at my desk at work with several fresh warm
slices of Tomato Soup loaf....just because. I had not had it in years. I know it sounds rather odd 
to have Tomato soup in a cake, but you'll just have to take my word...it is so good.
It can be made in an 8x8 cake pan, 1 loaf pan or a muffin tin.

Ingredients:
  • 2 tbsp margarine
  • 1 egg
  • 1 cup sugar
  • 1 tin tomato soup
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1 cup raisins
  • 1/2 cup nuts (optional)
Method:
  1. Stir together Tomato Soup and baking soda. It will foam up. stir well until the foam settles.
  2. Cream together margarine, eggs and sugar.
  3. In a separate bowl, stir together dry ingredients. Add alternately with soup mixture to the creamed mixture. Add raisins and nuts if using.
  4. Pour into greased pans. Bake @350 ยบ. 35 minutes for 8x8. 50 minutes for 1 loaf pan. 15-20 minutes for muffins.

  3. I love tomato soup cake, i made one last month...or i suppose month before last now that it is April. I have never thought to make it in a loaf pan, i usually make it in a square cake pan and ice it like brownies. Yummy!

  5. This is one of my Mom's 'tried and true' recipes. Whenever she'd make it she'd call it a spice cake until the guests tried it ... then she'd tell them that it's actually called Tomato Soup Cake! Apparently knowing that it contained tomato soup turned off enough people that my Mom learned to withold the main ingredient until they tried it lol. I haven't had a person yet who doesn't love this cake. We like to sprinkle powdered sugar over it. :)

  7. I've been making this for years. I made one last week and hubby was like tomato soup seriously? LOL I told him to just try it and he loved it. I made mine as a sheet cake then frosted it with cream cheese icing, absolutely delicious.

  19. I made this today as muffins and my kids loved them. I added about a cup of finely chopped carrots instead of raisins and nuts. Then I was inspired to try it with spinach puree instead of the soup. It's really yummy too, and I think next time I'll add mini chocolate chips! I just made the puree to be about the same consistency as the soup, had to add an apple (or apple sauce) to make it similar.

  24. My grandmother put walnuts & chopped dates in this. We always made it in a loaf pan & the big thing is that it stores really well. I took a loaf to college & we ate slices for weeks.
