Whoopie Pie Cookies

Recipe comes from my sister, she is one awesome baker!! My grandchildren love these cookies, actually anyone who loves chocolate will love these.
  • 2 cups white sugar
  • 1 cup shortening or lard
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 cup sour cream
  • 4 cups flour
  • 1 teaspoon salt
  • 3/4 cup cocoa
  • 2 teaspoons baking soda 
  • 1 cup boiling water
  1. Cream shortening and sugar, mix in eggs, vanilla, and sour cream.
  2. Sift together dry ingredients (except for the baking soda) 
  3. Stir into creamed mixture alternating with the baking soda which has been dissolved in the boiling water.
  4. Drop by spoonfuls on parchment lined baking pans and bake at 350ยบ for 6 to 8 minutes. 
  5. Once cookies are cool 'sandwich them' with the following icing.
  6. Yield: 32
Soft Icing
  • 1 1/2 cups icing sugar
  • 1/2 cup soft butter
  • 3 tablespoons flour
  • 1 teaspoon vanilla
  1. Beat butter till very creamy, add the rest and beat until light.

    These recipes sound fabulous and you can be sure that I will be trying them out for my family. As a "new" stay-at-home mom, I have been attempting to cook and bake from scratch rather than use "box" kits or processed foods!

  3. These cookies are really yummy! I've made a similar recipe and discovered an easy way to sandwich them......lay out all the bottoms upside down in rows, squeeze a blob of filling onto them with a cake decorating nozzle, then press all the tops on, and you're done, with little fuss or mess.

  4. Oh my goodness! My mom used to make these when me and my siblings were little. Even had the same name. Great memory. My sisters and I are making a family recipe book for all the grandkids and these are going in it.

  9. Please clarify the recipe for the Soft icing. The infredients for it have 3 tablespoons of flour. If you follow the directions given, you just beat allingredients for the Icing together, nothing is cooked, but how could that be with the 3 TBSP. of flour??????

  10. Anonymous..yes you beat the 3 tbsp of flour in with the rest of the ingredients for the icing..no cooking needed!
    If you don't want to use the flour I'm sure it would be fine too.

    I remember eating these at your older daughter's place many years ago...she said it was a recipe from her mom! I've made it twice in the past week and the cookies sure don't last long! Thanks Betty!

  19. I have just made these from a recipe in our local newspaper. They are cooling right now and smell fantastic. This recipe is very similar to yours. My recipe has melted mashmallows in the filling which I am going to do but decided to Google Whoopie Cookies to see what else I could find. I think I will try your recipe next time. Mnay Thanks.
