Ham and Egg Cups

Last Sunday morning, I had the family in for brunch and served one of our favorite quick and easy egg recipes. All you need is a muffin tin, ham and eggs, and a wee bit of grated cheese along with your herbs of choice.


Ham and Egg Cups

  • 12 slices of deli ham
  • 12 eggs
  • grated cheese
  • seasoning
  • chopped basil
  1. Spray muffin tins with Pam.
  2. Line each cup with a slice of deli ham (I asked that they not be sliced too thin...and had rather hefty slices this time).
  3. Break an egg gently into each ham cup. Season with salt and pepper...sprinkle with chopped basil (or chives or your herb of choice).
  4. Bake at 350' F for about 12-15 minutes.
  5. Remove from oven...and top each egg with grated cheese (cheddar or parmesan), and bake for 5 minutes longer.
  6. Remove from pan and serve immediately.


Serve with toast, or crescent rolls. Add a hash-brown casserole and a fruit salad and call it brunch.

This Sunday I am far away from my kitchen and enjoying someone else's cooking!

  2. Judy, I served this same meal three weeks ago when my daughter came in from out of town. This is one of my son-in-laws favorite breakfasts, the only thing I did not have on our plates was a lovely roll.

  4. What a neat idea...hubby and I prefer scrambled eggs, but bet I could scramble each egg, and sprinkle a bit of cheese on top right before they are done :)

  6. What a great idea! It sounds like a healthy version of quiche lorraine - I think my family is like Diana's and would prefer it scrambled, maybe I'll even try to sneak some vegetables in it! Thanks for the photo of your breakfast menu - it looks like a delicous combination of foods.

  9. I like that there is not much fuss and no mess involved here with the eggs. My sister-in-law serves egg cups done in s similar way and they are very good! Thanks for sharing the recipe and the rest of the brunch ideas.

  15. YUM! These are one of my favorites. I love that you can have 12 servings of egg, all done and hot at the same time. I've made them with a spoonful of a cheesy, oniony, thick roux under the egg.

  17. I found your blog last night and was going through your recipes and I came across this one... I made it for my family today... They all love it!! My husband and I prefer scrambled eggs and my boys prefer regular eggs.. I added a little bit of garlic powder and green onion tops.. Thank you for your wonderful recipes.. I have now bookmarked your blog so I can come back for more recipes.. :o)

  20. HOLY COW...I just discovered what I will serve my Bunco ladies ....breakfast for lunch. Perfect.
    I'll make these...(gonna add a touch of hot sauce to a few), hot bread, fruit salad and if I can find a good recipe for hash brown casserole, I am gonna be on top of the world.
    Then, about half way thru our Bunco....I'll bring out a awesome cake of some sort...with a good coffee...yay...thanks for the recipe and the idea.
