Ham and Egg Cups
- 12 slices of deli ham
- 12 eggs
- grated cheese
- seasoning
- chopped basil
- Spray muffin tins with Pam.
- Line each cup with a slice of deli ham (I asked that they not be sliced too thin...and had rather hefty slices this time).
- Break an egg gently into each ham cup. Season with salt and pepper...sprinkle with chopped basil (or chives or your herb of choice).
- Bake at 350' F for about 12-15 minutes.
- Remove from oven...and top each egg with grated cheese (cheddar or parmesan), and bake for 5 minutes longer.
- Remove from pan and serve immediately.
Serve with toast, or crescent rolls. Add a hash-brown casserole and a fruit salad and call it brunch.
This Sunday I am far away from my kitchen and enjoying someone else's cooking!
Judy, how simple and wonderful for a group of guests. Wondering what is on the plate, bottom right, nice and crumbly top?
ReplyDeleteJudy, I served this same meal three weeks ago when my daughter came in from out of town. This is one of my son-in-laws favorite breakfasts, the only thing I did not have on our plates was a lovely roll.
ReplyDeleteThanks for sharing it with all of your readers.
What a beautiful breakfast! I'll be so happy when I have time to create meals like this!
ReplyDeleteWhat a neat idea...hubby and I prefer scrambled eggs, but bet I could scramble each egg, and sprinkle a bit of cheese on top right before they are done :)
ReplyDeleteI love the idea of ham and egg cups and so pretty to serve..thanks Judy!
ReplyDeleteWhat a great idea! It sounds like a healthy version of quiche lorraine - I think my family is like Diana's and would prefer it scrambled, maybe I'll even try to sneak some vegetables in it! Thanks for the photo of your breakfast menu - it looks like a delicous combination of foods.
ReplyDeleteMy family of manly men would totally love this.
ReplyDeleteThanks for the recipe!
Oh I really love this idea for brunch. How simple and lovely!
ReplyDeleteI like that there is not much fuss and no mess involved here with the eggs. My sister-in-law serves egg cups done in s similar way and they are very good! Thanks for sharing the recipe and the rest of the brunch ideas.
ReplyDeleteThose cups are too cute! And you did some gorgeous photography of that yummy food! Linda
ReplyDeleteThis is a fabulous idea and a simple way to make an impressive brunch menu! I love it and I'm going to give it a try soon. Thank you Judy!
ReplyDeleteJudy . ..can you believe I have never done this?? I will now .. they look so pretty with the black forest ham making such a wonderful dark edge on the ham.
ReplyDeleteCan't wait to try this one. What a great idea! I still want to make that chocolate angelfood recipie, maybe this week.
ReplyDeleteThese are really very pretty Judy. Hmmm...I love how you are here but NOT here! Grin....
ReplyDeleteYUM! These are one of my favorites. I love that you can have 12 servings of egg, all done and hot at the same time. I've made them with a spoonful of a cheesy, oniony, thick roux under the egg.
ReplyDeleteClever, clever, clever. Love it!
ReplyDeleteI found your blog last night and was going through your recipes and I came across this one... I made it for my family today... They all love it!! My husband and I prefer scrambled eggs and my boys prefer regular eggs.. I added a little bit of garlic powder and green onion tops.. Thank you for your wonderful recipes.. I have now bookmarked your blog so I can come back for more recipes.. :o)
ReplyDeleteThanks Judy, made these this morning, with tomato and basil, mozza...yum!!! Very versatile!
ReplyDeleteThanks so much for this recipe, quick, easy and tasty. Nice presentation too, I made it for our Easter brunch.
ReplyDeleteHOLY COW...I just discovered what I will serve my Bunco ladies ....breakfast for lunch. Perfect.
ReplyDeleteI'll make these...(gonna add a touch of hot sauce to a few), hot bread, fruit salad and if I can find a good recipe for hash brown casserole, I am gonna be on top of the world.
Then, about half way thru our Bunco....I'll bring out a awesome cake of some sort...with a good coffee...yay...thanks for the recipe and the idea.
