Cool Cucumber and Tomato Salad


Cool cucumbers and fresh red tomatoes from the garden make this salad a summertime delight for the taste buds. It is very simple yet very tasty, easy to adjust the amounts according to how many people gathered around your meal table. All you need is:

  • One large English cucumber, quartered and sliced
  • 4 fresh tomatoes, cubed,
  • green onions or chives to taste about 1/4 cup
  • salt (lightly) and fresh cracked pepper (lots) to season 
  • 1 tablespoon fresh dill chopped or 1 teaspoon dried (I didn't have fresh this time)
  • 1/4 cup of mayonnaise,sour cream or plain greek yogurt. I used greek yogurt, (choose only one of the options or 2 tablespoons mayo and 2 tablespoons sour cream)
  • a squeeze of fresh lemon juice, to taste, I used about 1 tablespoon
This amount serves 4 generously, or 6 medium sides.

  2. Great twist on cucumber salad. Which is my kids fav salad. I can't wait to try this. My mom who I got my recipe from always made her salad with a smidge of mayo and an even smaller smidge of milk. Then salt and pepper. She probably added some dill at times. Toss all together and what a simple salad. The amount of mayo and milk was dependent on how much cukes you had.

    1. I guess it depends on how juicy your tomatoes were?
      Other wise you can adjust the amount of dressing, I can't think of what else it can be.

  5. When my kids were watching Veggie Tales a lot, they re-named this 'Bob and Larry salad'. It's fairly 'wet' at our house because of the tomaotoes.

  7. Love tomato and cucumber salad! Made something similar last night. Heirloom Cucumber Salad with 4 varieties of cukes (Dragon Egg, Lemon, Straight Eights & Mexican Sour Mini Gherkins), mayo, red wine vinegar, balsamic vinegar, our first ripe Amish Paste & Roma tomatoes, White Currant cherry tomatoes, and chopped, fresh basil, lemon basil, rosemary and oregano. Great post!
